Celebrate the start of May with an extra stop at the Lexington Farmers' Market this week. Tomorrow, May 2nd marks our first Tuesday/Thursday Market on the corner of Broadway and Maxwell! Our market members will be set up
from 7am-4pm with fresh spring produce straight out of the field.

If the promise of delicious products aren't enough, stop by market tomorrow to meet the newest addition to our staff, Josh England. Josh is joining us after working for over a year teaching English in China. Originally from Berea, Josh majored in International Studies and minored is Sustainable Agriculture at the University of Kentucky. Josh brings expertise and enthusiasm to the market and is eager to meet all of you!

 

On Saturday, you'll find your favorite farmers set up with tables full of fresh, spring products at Cheapside Park from 7am-3pmRemember, parking is FREE on Saturdays in the Financial Center garage across Main Street or anywhere on the streets in a designated spot. On Sunday, follow us to market on Southland Drive from 10am-2pm for another taste of spring.

 

Our Wednesday Market on the corner of University and Alumni will be coming soon with an opening date of May 22nd.

Recipe of the Week:

Spinach - Goat Cream Cheese Quiche

 

  

This week's recipe, found on the blog aggregator TasteSpotting, is a clever twist on a traditional spinach quiche. Many thanks to Josh England, the newest Assistant Market Manager, for turning on to us to this fantastic site!

 

Ingredients:
(makes 6 individual quiches)
 
For the pastry:
  • 2 cups flour
  • 1 1/3 sticks soft butter, cut into pieces
  • 1 egg
  • 1 tablespoon water
  • 1 teaspoon salt
For the filling:
  • 1/2 cup plus 1 tablespoon (goat) cream cheese
  • 1 cup minus 2 tablespoons ground mature goat cheese or pecorino
  • 1/4 teaspoon butter
  • 2/3 cup spinach
  • 1 shallot
  • 1 clove garlic
  • 3 egg yolks
  • 2/3 cup cream
  • nutmeg
  • salt
  • pepper

 

Directions: 

  1. Put flour into a bowl, add butter, salt and egg and start to work everything together with your fingertips, until it starts to form crumbs. 
  2. Then add water and knead a smooth dough. 
  3. Chill for an hour. Any leftover can be stored in the fridge for a week or frozen for up to 3 months.
  4. Melt butter in saucepan, satuee diced onion, add sliced garlic and spinach and keep on stirring util the spinach is wilted. 
  5. Press out any excess liquid from the spinach. Puree spinach with cream cheese, cream egg yolks. 
  6. Stir in cheese and season with salt, pepper and nutmeg. 
  7. Preheat the oven to 180�C (350�F). 
  8. Cover quiche forms with the pastry pour filling into it and bake for 10-15 minutes.

We WILL BE at the market Derby Day!  Would have been there sooner, but Mother Nature threw us a curve ball and we have been birthing babies, bottle feeding all of them, and milking mommas late at night just a couple of hours before it's time to start all over again the next morning.  Yep, all the babies came at once.  Such is dairy life, and fortunately, it's only temporary. Amazingly, it does make the adrenalin kick in just like with human babies.  (Mother Nature does do payback!)

So ... We are playing around with a pimento cheese ch�vre flavor because it is the pimento cheese time of year, and we will definitely have our tortas all tarted up with sundried tomatoes, sunflower seeds and local herbs and flowers. Perfectly pretty with slices of crusty bread for a Derby Do. 

If you don't see us at the market, please come to the farm and get us.  Just kidding, just kidding (pun intended!).

Look forward to seeing you on Saturday, rain, shine, snow or thunder. We may dozing at our booth, so just give us a gentle tweak on the arm and say something like "Come quick.  Honeybee is having a baby."

Our grill is up and running at both the Saturday and the Sunday markets so you can start the morning with a good breakfast of local eggs, an omelet which can contain our own beef sausage and your choice of other items and bacon.  There's also biscuits with your choice fillings.   We're also grilling hamburgers, bratwurst and jumbo hot dogs, all made with our beef!  When you get to market, smell the air. You should be able to follow the good smells to our tents!

 

We'll also have plenty of beef and lamb in our coolers. It's about time to start grilling and we have some impressive filet mignon, ribeye and other fine cuts to go on the fire. If you're looking for an economical steak, try our top sirloin. There are a lot of people in Lexington that are finding out that this cut is a fabulous piece of steak and a very good price.

 

We'll have plenty of breads and cakes on the table as well as a very wide selection of jams and jellies. Salsas and relishes round out the choices. There's something for everyone at the market so come on down, have a cup of coffee, sweet tea or hot chocolate and take a look around. You'll have a great time!

Everyone is welcoming the late spring this year.  We appreciate seeing so
many familiar faces returning to the markets on Saturday and Sunday
outdoors.  We will continue to attend each week, rain or sun or something
in between - hope to see you as well!

We've had great feedback on our jarred Salsa, Ketchup, and Marinara Sauce,
all professionally packed in BPA-free glass.  We'll continue to offer
these items each week until sold out - and we'll be planting enough for a
bumper crop of organic tomatoes this summer to restock the pantry.

NEW, NEW  We have found a professional charcutier to make delicious
sausages and bratwursts for us from Elmwood organic beef.  It has been
several years since we had our all-beef sausages to offer, and we are
really excited about these tasty and high quality offerings.

EGGS We offer each market our certified organic eggs from free-ranging
hens who live outdoors on grass pasture.  Both whole dozen and half-dozens
available. Our hens are always outside, enjoying the green growing grass &
clover and rewarding us with beautiful big brown eggs packed full of
flavor, orangey color, and healthful omega-3-fatty acids.

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus
organic beef, along with our certified organic whole chickens, cut-up
chicken pieces, and flavorful hearty stewing hens.  In addition, we have

Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

I am taking this year off to write more mystery novels, so I will not be with you this season.  However, Leo and Jean Keene from Blue Moon Farm have agreed to sell my honey which had won many awards from the Kentucky State Fair.   I have won sixteen honey awards through the years.  Right now my bees are working very hard bringing in this year's honey harvest. 

  

In March, the USDA released a report stating that the USA has lost 50% of all its European honey bees.  Please remember to plant clover in your suburban yard and let the dandelions bloom.  Plant non-hybrid flowers.  The bees need the nectar from these plants.  A grass yard benefits nothing unless you have a cow.  And support local beekeepers by paying a fair price for their honey.

We'll be harvesting more SPINACH for the weekend markets, and we'll have other greens from Vibrant Greens in Madison Co......ROMAINE, REDLEAF LETTUCE, ARUGULA and GENOVESE BASIL.  We can also get Watercress and Red Leaf Basil by special order.  Just let us know by email (deadline Friday, noon). 

 

We made pasta with Arugula Pesto for dinner the other night which was out of this world!  Here's the recipe:

Arugula Pesto

3 cups packed arugula leaves

1 cup extra virgin olive oil

Several baby green garlics (or 2 large garlic cloves)

4 Tbs. walnuts

2 Tbs. Parmesan or Asiago cheese

If you like some heat, add some horseradish or hot peppers.

Put all in blender or food processor and process to desired consistency.

(Will thoroughly dress 12oz dry wt. pasta to serve 6)
