I hope you all welcomed April in with lots of laughter this April Fools' Day. Now that it's April 3rd, and we can all go back to believing each other, it is safe to announce that this coming Saturday marks our last Indoor Market of the season. We would like to thank all of the wonderful customers and market members who made the winter market a success as well as the folks in Victorian Square who showed us much hospitality. We appreciate the opportunity to showcase the bounty of produce and products available during the winter in Kentucky.

 

While you are making your last visit to our Indoor Market this Saturday, don't forget to check out what's happening right across the street: The 38th Annual Home, Garden, and Flower ShowSeveral of our vendors will be participating in the Outdoor Living Market at the show April 4th - 7th in Heritage Hall. The time has almost come for us to venture outdoors for another year of fresh food (and fun!) and we hope you are as excited as we are! The opening day for each market is as follows:

Recipe of the Week:

Potato Nests with Creamy Cheese

 

   

This week's recipe, from  Bite Delite, will give a spring flare to the last of your winter potatoes. 

 

Ingredients:
  • 6-7 potatoes
  • 1/2 onion 
  • 1 egg
  • 1 cup cheddar cheese, grated
  • 1 cup ricotta cheese
  • 1 tablespoon sour cream
  • 1/2 teaspoon salt
  • pinch of black pepper
  • small parsley leaves

Directions: 

 

  1. Preheat oven to 350 degrees and thoroughly grease a muffin pan.
  2. Peel and coarsely grate potatoes.
  3. Pour potatoes into a bowl, add the salt and onion and mix together.
  4. Add the egg and stir, then add the cheese and mix it all up.
  5. Spoon into muffin tins and bake for 25 minutes, until golden brown and tops and edges begin to get crispy.
  6. Meanwhile, pulse sour cream with ricotta cheese and pinch of salt and paper in a food processor and process until combined. Refrigerate, covered, until ready to serve.
  7. Carefully remove nests from pans and place on a baking sheet.
  8. Using a small spoon, dollop about 1 teaspoon ricotta and sour cream mixture into each potato nest and top each with a parsley leaf.
  9. Serve.

Spring just may be upon us and next week we'll be back outside at Cheapside and Southland.  This week, however, we'll be in Victorian Square and we'll also be at the Home, Garden and Flower Show held at Rupp Arena and Heritage Hall.  Come see us at either place for a full selection of beef and lamb as well as our breads, salsas, canned items and other great items.  It'll be a great weekend for getting out so come on down to either location and support local food.  From our fields to your tables we do our best to give you fresh, wholesome and safe foods.

We continue to attend market each Saturday morning, and appreciate all of you that regularly come to the Indoor Market space!  Several popular items available include our jarred Salsa, Ketchup, and Marinara Sauce, all
professionally packed in BPA-free glass.  In addition, we have had a lot
of interest in the Organic Beef Bones for making beef broth, a definite
healthful elixir when starting with organic, grass-fed ingredients.

In addition, we have have a selection of Certified Organic sweet potatoes,
gold potatoes, and winter radishes, along with organic chicken & turkey,
organic beef, organic farm eggs, dried pantry staples, and much more.

EGGS We offer each market our certified organic eggs from free-ranging
hens who live outdoors on grass pasture.  Both whole dozen and half-dozens available. Our hens are always outside, enjoying the green growing grass & clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids.

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus
organic beef, along with a full selection of certified organic hens and
cut-up chicken pieces.  In addition, we have chicken liver and ground
turkey.  Feel free to order ahead for quantity amounts or a particular
cut for that special meal, and we'll have it ready for pickup at any of

Downtown at Victorian Square across from Rupp arena, Saturday, March 6th (opens at 8 am). 

 

You may purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

  

Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

Hello and Happy Spring!!  I know it's hard to believe that it really IS spring, but before we know it we'll be complaining about the heat!  We sure have missed seeing you all this winter, and hope you have fared well.....or better yet, been away to someplace warm and sunny!! We had a chance to go to Cherry Grove Beach near Myrtle Beach in February, to celebrate Jean's Mom's 90th birthday.  Really fun, not warm, but mostly sunny, and OCEAN....my favorite! 

 

We've been busy here, getting seeds planted and sets started, and things are starting to grow inside and out!  We'll have HERB SETS for your kitchen garden or to put in a pot on your deck, so start thinking about which ones you need.   BABY GREEN GARLIC is the first garlic of the season.  We've only had a little bit ourselves, so far, but there should be lots for market!   GARLIC SCAPE PESTO will be back, as well as our garlicky CHAMPAGNE  DRESSING for your spring greens.  Sunrise Bakery will be baking their wonderful ARTISAN BREADS, PASTRIES and (BMF garlic) BAGELS for us again this year, and Stone Cross Farm will be supplying the PORK PRODUCTS, handmade SOAPS, and their great Cloverdale Creamery CHEESES.  Colcord Farm is our BEEF connection, all cuts, all GRASS FINISHED.

 

I spent the afternoon yesterday grinding GARLIC POWDER to stock our display, and Leo has managed to get lettuces, cilantro, peas, and onions planted on the river bottom, and the spinach bed is all weeded out.  

The way the weather has been, we may have beautiful DAFFODILS for the first few markets, then LILACS will follow.  Who knows what else you might find at our booths on Short Street?

Also, on Saturday, April 13, shop at Lucia's World Friendly Boutique.  Faith Feeds will receive 10% of the proceeds from the day.  Lucia's offers fair trade and environmentally friendly products.  Ladies, I understand they have really neat purses made in Guatemala.  Lucia's is at 523 E. High St. in the historic Woodland Triangle shopping district, near Woodland Park.
