Recipe of the Week:

Winter Fruit Salad

This week's recipe, from Smitten Kitchen, is a delicious fruit salad that will satisfy your desire for fruit without requiring expensive berries from the other side of the world.

Ingredients:

  • 3/4 cup sugar
  • 3 star anise
  • 1/2 of plump vanilla bean, split in half lengthwise
  • 8 dried apricots, cut in half
  • 4 dried figs, quartered
  • 4 2-inch long pieces lemon zest
  • Juice of the zest lemon
  • 3 firm pears
  • 1 firm tart apple
  • Seeds from half a pomegranate

Directions:

  1. Fill a medium saucepan with 4 cups water. Add the sugar, star anise, vanilla bean and lemon zest. Bring to a boil, and cook until all the sugar is dissolved. Let it cool for just a few minutes (it should still be hot) and then stir in the dried figs and apricots. Let it cool completely.
  2. Meanwhile, peel and core pears and apple. Slice thinly lengthwise and place in a large bowl, and toss with the lemon juice.
  3. Once the syrup with dried fruit has cooled, pour it over the apples and pears. Cover the bowl with plastic wrap and chill it overnight in the refrigerator.
  4. The next morning, using a slotted spoon, ladle the fruit into a serving bowl, sprinkle with the pomegranate seeds and serve. Remove the vanilla beans (you can rinse and save what is left of them for another use) and lemon peels if you wish, or leave them in for decoration.

Do ahead: Syrup can be made in advance and kept in the fridge for a day or two. Hot syrup can be poured over the dried fruit and kept in the fridge for a day or so. Prepared salad keeps in the fridge for a day or two, but is best fresh.

HERE'S A BIT OF WHAT YOU'LL FIND AT THE MARKET THIS WEEK...

QUARLES DAYLILLIES AND FARM
 WEBSITE | FACEBOOK ]
Shelby County
Spring is rolling right along here on the farm.  We've had our first set of lambs and several other ewes look like they could lamb any day.  There are lots of new baby calves in the field and more to come.  If we have any luck today, the plows will go in the ground and the garden will be turned by the end of the day.  Life is starting to awake from barren ground and soon we'll be moving back outdoors at the market.

In the meantime, we're still having market in Victorian Square each weekend.  We'll have our coolers full of beef and a few cuts of lamb still available.  We still have a good selection of winter squash, potatoes, turnips and maybe even a little kale if it grows a little this week.  The breads table will be full and we'll have plenty of salsa, relishes, jams and other items made with locally grown items.  Our new item will be apple blueberry jam which, along with hot biscuits, is excellent.

Stop in and have lunch with us.  We'll have beef stew, chili, brats and jumbo hot dogs.  These items were all made with our beef.  Check it out.  Wholesome, good food.

Drop in on our website for beef and lamb prices and check out our Facebook page.  Last week we got some baby pictures up and we'll continue to add other pictures as spring rolls out!

THE FAYETTE ALLIANCE

The Fayette Alliance is Lexington's ONLY land-use advocacy organization that regularly educates and lobbies local government for a sustainable growth model that benefits all of us.

We believe that preserving our signature Bluegrass landscape, creating a dynamic and equitable cityscape through infill redevelopment, and improving our natural waterways by fixing our sanitary sewer and stormwater systems are key components to achieving our economic and environmental promise here in Lexington-Fayette County.

We are an alliance of citizens from the entire community, including stakeholders from the agricultural, neighborhood, and infill sectors. We are a united voice for responsible growth, and only weigh-in on those land-use issues that have countywide implications. Together we can chart our future, and positively impact local zoning decisions-the very building blocks of our community.

If you want a better quality of life for all of us, please join The Fayette Alliance today for free.  Visit www.fayettealliance.com for more information.

WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so please pledge now and thank you so much for supporting WUKY.
