The Lexington Farmers' Market

January 30th, 2013

Wow, what a year 2012 was! During these winter months, the LFM team has been able to reflect on last year's accomplishments while making plans for an interesting and engaging 2013.

This week came news of a particularly wonderful accomplishment in 2012 from our community partner, Faith Feeds|Glean KY. Last year, Faith Feeds gleaned a record 81,410 pounds of fresh fruits and vegetables from LFM vendors, area growers, volunteers and donors. That means over 40 tons of food were delivered to over 28 agencies and individuals that provide food to people who are hungry in 2012!

During a time when the United States wastes up to 40% of its food (NRDC,2012) and global food waste estimates reach 50% (IME, 2013), the work of Faith Feeds|Glean KY is more important than ever. Gleaning in 2013 has already begun and when our outdoor markets open in the spring, Faith Feeds will be gleaning 7 days per week.

Be sure to thank the Faith Feeds volunteers if you see them at market and check the Market Happenings section of the newsletter to watch the 'pounds gleaned' count go up each week!

As always, don't forget:

Our Indoor market, located in the Victorian Square Atrium, is NOW OPEN from 8am-1pm every Saturday.

Parking is FREE on Saturdays on the streets.  We will also validate parking for the Victorian Square parking garage located at 350 W Short Street. This week, there is a 6pm UK home game, so parking will start charging two hours before tip off. Come early, beat the crowd, and as always, we will try to accommodate you to the best of our abilities.

See you at market!

Recipe of the Week:

Blue Corn Nachos with Homemade Guacamole

This weeks recipe, from Cookie + Kate, is a perfect game day appetizer. Serve it up for your friends this weekend and let me know what you think!

Ingredients:

Nachos

  • Blue corn chips
  • 1 1/2 cups shredded raw cheddar or Jack cheese
  • 1/3 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/3 cup chopped roasted red pepper
  • 1 jalapeo, seeded and membranes removed, finely chopped
Guacamole
  • 2 ripe avocados from Mexico
  • 1 tablespoon fresh lime juice
  • 1 to 2 cloves garlic, minced or crushed through a garlic press
  • 1/2 teaspoon salt (add more to taste)
  • 2 tablespoons chopped fresh cilantro
  • 1/4 teaspoon ground coriander
  • 1/2 to 1 jalapeo, seeded and finely chopped (optional)
  • 3 medium radishes, top and bottom ends removed and finely sliced

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. Place handfuls of chips on the baking sheet and distribute evenly, minimizing the gaps between chips.
  2. Sprinkle generously and evenly with shredded cheese. Sprinkle veggies over the cheese, then sprinkle on the feta. Repeat to build layers if you're feeding a crowd. Bake until the cheese is melted and bubbling, about 15 minutes for a single layer or 20 minutes for multiple layers. Serve immediately on a heat-safe surface (transfer the parchment paper to a serving platter or at minimum, warn eaters of the hot baking surface).
  3. While the nachos are baking, make the guacamole. Slice the avocados in half length-wise, running your knife around the pit. Twist the halves in opposite directions, then pull apart the halves. Dislodge the pits and use a large spoon to scoop the flesh into a medium bowl. Sprinkle with lime juice, then mash the avocado with a large fork or potato masher. Stir in the garlic, salt, cilantro, coriander, jalapeo (if using) and chopped radishes. Serve immediately.

These products can be purchased from LFM vendors:

  • Cheese
  • Onions
  • Garlic
  • Radishes

HERE'S A BIT OF WHAT YOU'LL FIND AT THE MARKET THIS WEEK...

QUARLES DAYLILLIES AND FARM
 [WEBSITE | FACEBOOK]
Shelby County
This time of year is chuck roast weather.  Pull out the roaster, drop that jewel in and pop it in the oven.  Before it's done cooking peel some potatoes, a few carrots, turnips and onions and drop them in to simmer in the beef juices.  Turnips?  Well, yes.  Turnips are a great root vegetable that often gets a bad rap.  Turnips are also a great addition to any plate of roasted veggies.

We'll have plenty of turnips as well as potatoes, butternut squash, delicata, acorn, and spaghetti squash this weekend.  We have a few apples that make excellent cooked apples as well as apple pies and other apple desserts.

The coolers will be full of beef and lamb and the tables full of breads and canned goods.  If you're not into chuck roasts, we have an excellent selection of steaks available along with plenty of ground beef, chuck and round.  Brats is a good change of pace.  Try some with some sauerkraut.  Excellent.

Visit our website or Facebook page. We welcome and appreciate your thoughts and comments.

THE FAYETTE ALLIANCE

The Fayette Alliance is Lexington's ONLY land-use advocacy organization that regularly educates and lobbies local government for a sustainable growth model that benefits all of us.

We believe that preserving our signature Bluegrass landscape, creating a dynamic and equitable cityscape through infill redevelopment, and improving our natural waterways by fixing our sanitary sewer and stormwater systems are key components to achieving our economic and environmental promise here in Lexington-Fayette County.

We are an alliance of citizens from the entire community, including stakeholders from the agricultural, neighborhood, and infill sectors. We are a united voice for responsible growth, and only weigh-in on those land-use issues that have countywide implications. Together we can chart our future, and positively impact local zoning decisions-the very building blocks of our community.

If you want a better quality of life for all of us, please join The Fayette Alliance today for free.  Visit www.fayettealliance.com for more information.

WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so please pledge now and thank you so much for supporting WUKY.
