Summer Salads to Make Your Season Merry & Bright

Tis the season! No, it's not Christmas yet, but for bona fide foodies, summer is the season to be jolly. This is the time to rejoice in summer's bounty of tomatoes, plums, zucchini, berries and melons that we find pouring out of local farmers' markets, roadside farm stands and our gardens.
When brought to the table, produce at it's peak doesn't need to don fancy gay apparel. Instead, decorate it with a simple finishing of fruity, extra virgin olive oil, a drizzle of honey or a lively spritz of vinegar.Whether a zippy jalape�o infused olive oil, an herb blossom honey or toasty pine nuts, these modest adornments allow the vibrancy and freshness of the fruits and vegetables to shine. Here are our 3 favorite five-ingredient salads for decking a summer table: |
1. Watermelon, Heirloom Tomatoes, Feta, Jalape�o Oil & Cilantro
This sweet and savory salad gets a zesty punch from Jalape�o Olive Oil from California (the olives are pressed with the peppers for bright, fruity oil with a rounded heat). The spice from the oil heightens the juiciness of the watermelon while also accenting the subtle acidity of the tomatoes. To make, layer sliced melon and tomatoes on a large serving platter. Crumble feta over salad. Finish it with Jalape�o Olive Oil and a sprinkling of chopped cilantro.

2. Plums, Blackberries, Ricotta, Lemon Zest & Thyme Blossom Honey
Herbaceous Thyme Blossom Honey paired with tart plums, blackberries and creamy ricotta creates a beautifully balanced salad, ideal for breakfast or dessert alike. Simply prepare by tossing sliced plums with whole blackberries and some lemon zest. Spoon fruit into individual bowls and top with a dollop of fresh ricotta and a generous swirl of honey.

3. Zucchini, Basil, Pine Nuts, Lemon
& Olive Oil
Rich pine nuts from Italy are the perfect foil to crunchy, raw zucchini and lively lemon and basil. This bright salad makes a great, light lunch as well as a side dish to grilled fish or seafood. Using a mandolin, shave zucchini into long ribbons. Toss zucchini with lemon juice and a splash of fruity, extra virgin olive oil, like S�ka Hills. Arrange squash ribbons on a serving platter and garnish with torn basil leaves and toasted pine nuts.
