With the release of his latest book, Cooked, Michael Pollan got us thinking again about the idea of creating community through eating together. Pizza might be the ideal food to bring people together both in the kitchen and at the table. Making pizza at home is easy and fun. You can please adventurous foodies and picky eaters alike with one pie (halfsies anyone?). So get out the "00" flour, or grab a premade crust, gather your loved ones and get the pizza party started. Here are our all-star ingredients to create some amazing, and some unexpected, pizza pies. |
A Fruity Splash
This Californian extra virgin olive oil sings with tropical aromas of passion fruit and ripe plantains (we really wish there was a virtual scratch and sniff for this one). Use to embellish a fresh pizza of heirloom tomatoes and chopped basil or pair with fish and seafood. Transform classic shrimp scampi into a pizza - top with prawns, slivered garlic, parsley leaves and a generous drizzle of A2. Best used to garnish pizzas as they are coming out the oven (if too much heat is added to olive oil, it will lose its fruity nuances).

That Pie is the BOMB(A)
For an arrabbiata pizza anytime, kick tomato sauce up a notch by simply mixing in a teaspoon of Bomba Paste. Top with mozzarella, broccoli rabe and sweet Italian sausage. Or let your guests add as much heat as they want and put a bowl of this fiery condiment made from crushed chilies, olive oil and a dash of vinegar on the table. |
My, What a Worldly Pie
Give your pizza a North African twist with Merguez Sausage, a zesty blend of lamb & pork flavored with smoked paprika, cumin and turmeric. Partner with tomato sauce flavored with green olives and preserved lemon (such as Teboursouk Sauce) and finish with a smattering of chopped fresh mint and lemon zest. These artisanal sausages are made daily with antibiotic and hormone-free meats in Oakland, California (also available in Sweet Italian, Hot Italian and Rosemary Pinenut).

Pizza + Truffle = Love
This Tuscan sheep's milk cheese studded with black truffle shines in simple preparations. Add a subtle touch of decadence to pizza bianca with a handful of arugula and shavings of this truffled pecorino. Or celebrate the truffle in all its aromatic glory - drizzle Black Truffle Oil over a pizza adorned with roasted wild mushrooms and freshly grated Pecorino Staginato con Tartufo.

A Saucy Slice
Last week our buyers did a blind tasting of twenty tomato sauces and the classic tomato sauce from Rustichella d'Abruzzo came out on top for its artful balance of sun-ripened tomatoes and sweet, subtle notes of basil. A no-brainer for pasta, this sauce is also a great base for pizza. Keep on hand for a spur of the moment pizza party.

Not One, But TWO '0's
This super-soft flour from Italy, revered by pizzaiolo and chefs, is the gold standard of pizza flour. The fine texture and lower gluten content creates elastic dough that results in thin, crackling crusts like the ones you'd find in Naples, Italy. If you make your own dough, this flour is a must-have pantry ingredient.
