Mugolio Pine Cone Bud Syrup1. Mugolio (Pine Cone Bud Syrup)

from Primitivizia
The Dolomite Alps hold the secret to one of our favorite products - the mugo pine. Elinora Cunacia, owner of Primitivizia, harvests these pine cones and stores them in sun-drenched glass jars for a few months, coaxing out the sweet syrup from within. In late Autumn, the syrup is filtered and cooked with sugar to a deep golden brown liquid. This syrup has a rich, pine and honey flavor that is a perfect complement to apples and pears, creamy cheeses like ricotta or mascarpone and stone fruits like peaches.       Mugolio - $25

From coastal Georgia, we think this is one of the best honeys in the US. The Tupelo tree flowers for a very short time each year and it is within this small window of opportunity that the honey is produced. This variety of honey has a lot of interesting characteristics, one of which is its unique structure. It never crystallizes so you've always got a smooth honey when you need it. Colatura di Alici5. Colatura di Alici (Anchovy Syrup) from Azienda IASA
One of the treasured ingredients of the region of Naples is colatura di alici. The deep brown elixir is extracted during the anchovy curing process taking five months to produce. Rich with the flavors of the sea and the anchovy flavor, colatura dates back to ancient Rome. Until recently this ingredient was rarely found in the United States. In fact, the production of this incredible liquid has dwindled enough that Slow Food International has declared their protection of this ancient ingredient.
