Fruit Vinegars from Pojer & Sandri
Perched on the steep eastern side of the canyon-like valley of the Adige River, Pojer & Sandri is one of the most remarkable wineries in the Trento region of Italy. The dynamic team of Fiorentino Pojer and Marco Sandri have owned the estate since 1978, when Fiorentino, as the landowner, teamed up with Marco, who had just graduated from enological school. They set out to protect and revive the many local grapes of the area and produce wines which were almost forgotten. Today, they are widely respected as one of the most unique and trend-setting wineries in Italy. Pojer & Sandri has now expanded their expertise to include the production of high quality fruit vinegars.
Pojer & Sandri's single-fruit vinegars are in a class of their own. These incredible vinegars are made from the juice of fermented fruit, rather than from wine. After carefully selecting the fruit from the family's orchards or from select farmers in the area, the fruit is gently pressed and inoculated with yeast to ferment. After reaching the desired sugar content, the fermented juice is then put through the trucciolo lento method and placed in oak barrels containing some of the vinegar "mother." Depending on the fruit, the process might take anywhere from 18 to 24 months until the right balance of acidity and fruitiness is achieved.

Antipasti from Masseria Mirogallo
Since the 1800s, one of the largest farms in Lucana Valley of Basilicata, Italy has been owned by the Mirogallo family, who specializes in the cultivation and preservation of heirloom varieties of fruit and vegetables from which they hand-make very high quality pantry products. The Mirogallo brothers are quick to point out that everything they put in a jar comes from their fields, and that the only preservatives they use are vinegar and salt. Every summer, the Mirogallo farm is bustling with many farm-workers hand harvesting perfectly sun-ripe fruit and vegetables. Inside the old white washed farm building, a state-of-the-art kitchen transforms the bounty of every day into a wide array of jars of all color and sizes. Zucchini Involtini in Extra Virgin Olive Oil - $20 An involtino (roll) of crunchy zucchini wrapped around a heart of tender, sweet sun-dried tomato and marinated in high quality extra virgin olive oil. Artichokes Hearts in Extra Virgin Olive Oil - $18
Surprisingly al dente and crunchy to the bite, these artichokes are peeled by hand to the core, then simply blanched in acidulated, salted water and left to marinate in extra virgin olive oil. Serve as an accompaniment to salumi platters, grilled or boiled meats, or simply with crusty toasts for aperitif and antipasti. Ideal to use as a pizza topping, in a salad or just out of the jar with a spoon.
Wild Red Onion in Extra Virgin Olive Oil (Lampascioni) - $18
The crunchy bite-size onions are dug-out by hand in early May, washed and then blanched. Once cooled, the lampascioni are put in the glass jar and topped with extra virgin olive oil. These wild onions are ideal to serve with olives, salumi and cheeses as part of an antipasti assortment. Toss with a warm farro or rice salad, or serve as an accompaniment to grilled fish, roast pork or a bountiful bollito misto.
