I had one job when it came to planning our two-family trip to Oahu this spring break. Make sunset reservations for our last night ashore. The plan was to save our big night for the end and dine at sunset. First choice, The award-wining Beachhouse restaurant situated in the historic, Moana Surfrider hotel. This plantation style building has been a Waikiki landmark for more than a century. I failed in my task. I waited too long and had to settle for a reservation much later in the evening. Turning lilikois into passion fruit juice, I tweaked our itinerary, added a stop at the Royal Hawaiian's Mai Tai Bar (at sunset) and a few photo opportunities all within walking distance of our final destination -- dining during Somoa's sunset. If you are also heading to the islands in the next few weeks, here are a few of my top picks for celebrating that "last night ashore." Kauai
There are few places on the planet as beautiful as Hanalei Bay on Kauai, and Kaui Grill at the St. Regis, Princeville is the ideal spot to take in the beauty and enjoy the island's bounty. On the other side of the island, the hot spot with an almost-ocean-view is Red Salt at the swanky, Koakea Hotel in Poipu. For the ultimate sunset-over-the-water experience, try Beach House Restaurant.

Maui
If you're staying on the Kaanapali/Kapalua side of the island, make 6:30 p.m. reservations at the award-winning, Merriman's Kapalua. Otherwise, I've got a few favorites in Wailea; Amasia, Ko and Nick's Fishmarket have been getting lots of attention, as has Peter Merriman's latest venture, Monkey Pod.

Hawaii
The high-end dining spot at The Four Seasons Haulalia is now much easier to pronounce, Ulu Ocean Grill, same great views and an award-wining chef. Further up the coast, the Canoe House at the Mauna Lani is back in the spotlight these days and for a more casual experience, if you're staying in Kona, don't miss the deck at Huggos.
