Mushrooms

for vitality

Serving Mum some terrific mushroom meals will show her you care and in more ways than you might think. Sure, there is the consummate taste but you are also serving up a healthy dose of goodness that can help to keep her in tip-top shape and give Mum the energy to cope with everything that life throws her way.

You may never have thought of the mushroom as a vitamin supplement, but you can be assured that a serve of mushrooms provides a healthy dose of the essential B group vitamins riboflavin (B2), niacin (B3), pantothenic acid and biotin.

The vitamins niacin and riboflavin are involved in normal body cell function and in the release of energy from carbohydrate, protein and fat. Just the thing for busy Mum's everywhere.

Readers question

If you have a question relating to mushrooms, why not send it to us and we will share some of the answers with our fellow mushroom lovers. This month we have an inquiry that always provides plenty of debate among health professionals.

Q: I have heard mushrooms referred to as a superfood. What is a superfood?

(Pam from Hobart)

A: The term "superfood" is used a lot by the media, perhaps too often, yet there is no precise definition of the term. It is undeniable, however, that the mushroom is quite an exceptional food! Mushrooms provide nutrients in amounts not usually found in vegetables; a single serve delivers more than 20% of the recommended daily intake for six essential nutrients: riboflavin, niacin, pantothenic acid, biotin, copper and selenium; mushrooms have an anti-oxidant capacity similar to, or better than, most common vegetables; and they provide bio-active compounds that appear to improve immune function and potentially lower the risk of breast and prostate cancer. So when anyone asks whether mushrooms are a "superfood", feel free to say yes! And they taste great too!

Janelle Bloom shares her

Mother's Day story

One of our favourite mushroom chefs, Janelle Bloom comes from a close family and for her, good food and family is an integral part of the Mothers Day festivities. One of three girls, Janelle says they make a point of gathering over a late breakfast to share time with Mum and her extended family.

"We all take food and share what we have. There are always mushrooms on the table. This year it will probably be something simple - some nice BBQ flats with scrambled or poached eggs. A quick, easy and delicious part of breakfast, which leaves plenty of time for Mum!"

Watch Janelle whip up Lemon & Herb Pilaf Roasted Mushrooms a family favourite.
