Kiwicha is another name for amaranth, which is a gluten-free whole grain. The word "amaranth" in Greek means "everlasting," while the Aztecs called it the "food of immortality." In India, where it is also used, it is called "rajgeera," which translates as "king's grain." In Quechua, the ancient Inca language that is still spoken in the Andes, it is called "kiwicha" (pronounced kee-wee-cha). The 'grains' of kiwicha are tiny and poppy-sized, but each plant can produce 100,000 seeds. Kiwicha is a natural plant from the high Peruvian Andes and is one of the prettiest crops.
