A Message to LVCC Parents,
Family Members and Guardians
While you spend the next few days finishing preparations for the upcoming festivities and decking the halls, I would like to send holiday greetings from all of us at Lehigh Valley Children's Centers. Thank you for choosing LVCC as your child's early education and child care program. I appreciate the opportunity you have given us to care for and educate your child, and value your trust and confidence in our abilities. I hope that our programs and customer service are meeting or exceeding your expectations this year and those to come.
You are very important to us at LVCC. It is seeing you and your child on a regular basis that makes our jobs a pleasure and keeps us motivated to continuously learn and grow in order to provide you and your child high quality programs.
May your holiday season and the New Year be filled with much joy, happiness and success. The staff and I look forward to working with you in 2013 and hope our relationship continues for many years to come.

Cooking with Chef Randy
Move over Iron Chef; Chef Randy has arrived! Randy Levan, Central Food Service Manager at LVCC, is taking his traveling cooking program on the road. Pre-K Counts children from LVCC at South Mountain and LVCC's Campus Center were the first to experience the fun in preparing simple, nutritious snacks.
Each child began by decorating a paper cook's hat. Throughout the cooking class, the chefs-in-training learned the importance of nutrition by eating fresh fruits and whole grains. When asked why we eat fruit, some of the children answered, "Because it's healthy and makes us stronger."
Upcoming classes for Pre-K Counts students will be held at 9:00 a.m.:
- January 8 - LVCC's Judith Chase Early Learning Center
- January 16 - LVCC's Fowler Center on Main Street
- January 22 - LVCC on Union Boulevard
- January 29 - LVCC on Walnut Street
Fresh Fruit Wraps with Wheat Tortilla
Ingredients:
4 - medium size whole wheat soft tortilla shells
8 oz. low-fat cream cheese (softened)
8 oz. yogurt (plain or fruit)
1 cup (varies with fruit used) fresh fruit like strawberries, bananas, blueberries and raspberries.
Directions:
Spread low-fat cream cheese and/or your favorite yogurt on the tortilla shell. Slice your favorite fruit and spread over tortilla shell. Starting at one end of the tortilla shell, roll up. To make a colorful display of swirled fruit, slice up the rolled tortilla shell into 1-inch sections. |
Healthy Food Series for Parents
Do you have a picky eater at home? Learn how to turn those hard-to-please kids into healthy eaters at LVCC's Parent Nutrition Education Sessions sponsored by Cedar Crest College. Hosted by LVCC's Fowler Center on Main Street and LVCC at South Mountain, the series discusses the food groups in relation to specific age groups.
During the cooking demonstration, representatives from the Cedar Crest College dietetic internship program present tips on getting children to eat, along with food safety reminders. Participants have the opportunity to taste the healthy treats. Parents receive nutritious recipes kids love and a bag of ingredients to make the recipes.
