Garden Greens w/ Berry Balsamic
  • 2 cups fresh or frozen berries (thawed if frozen)
  • ¼ cup honey 
  • ½ cup balsamic vinegar
  • 2 medium shallots, roughly chopped
  • 2 tablespoons Dijon mustard
  • ½ teaspoon sea salt
  • ¼ teaspoon pepper
  • ½ cup olive oil
  • 6 cups salad greens
  • 1 cup cherry tomatoes, halved
  • ½ cup Walnuts
  • 4 ounces goat cheese, crumbles

This is one of the single largest hurdles I have to overcome with clients, teaching them to incorporate healthy fats into their diet and remove the modern bad fats.

 

Why Fat?  

 Fat is the foundation of our cellular structure and hormones. It is the long-burning fuel our body utilizes between meals. It enables the absorption of our fat soluble vitamins A, D, E, K. Without it we have dry hair, brittle nails, poor eye sight, fatigue, moodiness and depression, and our immune system is significantly impeded. The big aha for many is the drop in their LDL cholesterol levels when they start eating healthy fat. The Pacific Northwest Bonus! 
Having grown up next to clean water, fresh air, locally grown food, and outdoor adventure footsteps away, it is easy to forget that other parts of our country are not so conducive to health.  A recent Gallup poll ranked the Pacific Northwest in the top three areas to live in 2032.  Rankings were based on overall community health, optimism, and gainful employment of the populous.

Farmer's Markets are one of my favorite summer events.  I always meet new local entrepreneurs as I gather my fresh fruits and veggies.  Its really about the fresh berries for me!  Our region truly is a gift to health if you slow down and take the time to enjoy it!
