"A Growing community making disciples who love and serve Christ and His world"

| Greetings!
Tuesday night we had a very good vestry meeting. Kirk Bone, the senior warden, will have a report outlining the meeting in next week's enews. I was pleased to see a number of guests at the meeting. For years nobody seemed interested in the work of the vestry. That is changing and I think everybody that serves on the vestry is pleased with this heightened interest and energy. I would like to outline our policy for how we will incorporate the input of guests into vestry meetings. In order to allow the vestry to handle their important business, conversation will be focused on items on the meeting agenda. The Executive Committee, which consists of the Dean, wardens, Treasurer and Operations Manager, sets the agenda. Suggestions for the agenda should be directed to one of these individuals. Every effort will be made to post the upcoming agenda on the vestry bulletin board on the Friday before Tuesday's vestry meeting. Before the vestry begins discussing an action item on the agenda, guests will be given an opportunity to speak about the item for a period of up to two minutes each. After all the guests have been given an opportunity to comment, the vestry will then hold their discussion. We are blessed with a remarkable vestry that has been working hard to be connected and open to the membership of the Cathedral. Each vestry member prays regularly for a portion of the congregation. They also attempt to reach their section of the congregation by telephone. They wear vestry name-tags on Sunday so they are approachable. The minutes of the vestry meetings are posted on a bulletin board and the Senior Warden provides a summary of the meetings each month. I hope these guidelines make it even more clear how you can be involved in the work of the vestry. Brian Baker Dean of the Cathedral tvrbaker@trinitycathedral.org http://blogs.deanbaker.org/ |

From the Health Ministry...
Weekly Recipe: Double Strawberry Pie
Filling Ingredients: 2 ½ pints fresh strawberries ¾ cup sugar 1/3 cup lemon juice 1 cup water 2 teaspoons unflavored gelatin
Crust Ingredients: ½ cup all purpose flour ¼ cup cornmeal 2 tablespoons sugar ¾ teaspoon baking powder ¼ teaspoon salt 2 tablespoons cold butter, cut into pieces 3 tablespoons low fat milk
Directions for filling: Choose 2 cups of strawberries as close to the same size as possible; hull and set aside. Hull and dice the remaining berries. Mix the diced berries, ¾ cup sugar and lemon juice in a bowl. Let stand for 20 minutes. Drain the berries well in a sieve set over a medium saucepan. Return the berries to the bowl and set aside. Add water and gelatin to the strawberry liquid in the saucepan and heat over medium heat, stirring, until the gelatin is completely dissolved. Remove from the heat and stir into the reserved diced berries. Refrigerate, stirring occasionally, until the filling has thickened slightly and mounds when dropped from a spoon, 3 to 4 hours.
Directions for crust:
Preheat oven to 350 degrees. Stir together flour, cornmeal, 2 tablespoons sugar, baking powder, and salt in a large bowl. Cut butter into dry ingredients using a pastry cutter, two forks, or your finger until crumbly. Stir in milk with a fork, 1 tablespoon at a time, just until dough comes together. Turn dough out onto a floured surface and knead 7 to 8 times. Roll out into an 11 inch circle with a floured rolling pin. Drape dough over rolling pin and fit into a 9 inch pan. Fold edges under and crimp with the tines of a fork. Prick bottom of crust with a fork and line with foil or parchment paper. Fill with pie weights and bake until lightly browned, 8 to 10 minutes more. Place on a wire rack to cool.
Directions to assemble pie: Arrange reserved whole berries, pointed ends up in crust. Spoon filling over whole berries. Refrigerate until firm, at least 2 hours, before slicing.
