The quiet of winter is upon our homes. Gone are fall colors and the ground is cold. A great way to lessen those winter blues is to host a fun get together with family and friends.

The winter barbecue is an opportunity for guests to revel with cocktails in the bracing beauty of a winter night and then head inside for the cozy comfort of winter char. it makes sense to grill outdoors when the temperatures dip. It's a lot more pleasant to stand next to a grill when it's chilly than when it's 100 degrees! It also frees up oven space for side dishes and desserts. Kitchen cleanup is minimized.

Light up your deck, patio or screened in porch with strings of colored Christmas lights. Not only will it give your party some extra flair and festivity, it will offer the cook some extra lighting while cooking on the grill. Your guests will quickly forget about the winter cold when surrounded by the fun decor.

Lil Gayle's Recipe Corner!  
Chargrilled BBQ Tofu Burgers 

  When you host a Christmas day meal you have to make sure you cater for everyone's needs. It is a special day and you'd hate to see someone left out. Some guests may have peanut or seafood allergies, which can be a hazard. But then there are also guests that may be Vegetarians. It is imperative to find out ahead of time if anyone is and if so you can whip up a couple of these amazing barbecued tofu burgers. This recipe has been known to receive the nod from the most picky eaters that enjoy their red meat...Chargrilled tofu burger with Gayle's BBQ Sauce and hummus is not just the choice of vegetarians.

    1 block firm tofu
    2 tablespoons olive oil
    1 tablespoon red wine vinegar
    1 garlic clove, crushed
    1 Turkish pide loaf, cut into 4
    1/2 cup hummus dip
    2 large iceberg lettuce leaves, shredded
    2 ripe tomatoes, sliced
    1/2 red onion, thinly sliced
    Gayle's BBQ Sauce, to serve

Directions:
Cut tofu block lengthways into 4 thick slices. Combine oil, vinegar and garlic in a shallow ceramic dish. Add tofu and turn to coat in marinade. Cover and refrigerate for at least 30 minutes, or up to 24 hours, if time permits, turning once.

Preheat barbecue grill on medium-high heat. Cook tofu for 2 minutes each side, or until charred. Meanwhile, split bread and lightly toast on both sides. Spread hummus over each bread base. Top bases with lettuce, tomatoes, onion and tofu. Drizzle with Gayle's BBQ Sauce. Cover with bread and serve!  

 

BBQ Meatball Skewers...
And for our meat-lovers...You know we love food on skewers here at Gayle's BBQ... so easy to prepare, cook and eat. These tasty barbecue meatball skewers go to another level with the added bacon and smokey Gayle's BBQ Sauce. You'll need 12 bamboo skewers.. (pre-soak skewers in water so they do not burn while cooking.)

Ingredients:
    1 and a half lbs ground beef or turkey
    1 egg, lightly beaten
    3/4 cup fresh breadcrumbs
    1 small brown onion, grated
    1 half package of bacon, cooked and crumbled
    2 garlic cloves, crushed
    1/3 cup Gayle's Chipotle BBQ Sauce, or your favorite flavor of Gayle's
    2 tablespoon finely chopped fresh chives
    Olive oil
    Salad leaves and additional Gayle's BBQ Sauce to serve

Directions:
Combine meat, egg, breadcrumbs, onion, bacon, garlic, barbecue sauce and chives in a bowl. Season with salt and pepper. Mix to combine. Roll level tablespoons of mixture into balls. Place on a plate. Skewer 3 meatballs onto each skewer. Coat barbecue grill with oil. Heat over medium-high heat. Cook skewers, turning, for 5 to 7 minutes or until browned and cooked through. Serve with salad and sauce.
