The fall season may bring shorter days and colder nights, but there's always something to look forward to! Don't forget to FALL BACK and turn your clocks back one hour at 2 a.m. on Nov. 3, 2013, marking the end of daylight saving.

 

This year Chanukah begins a day before Thanksgiving at sundown on Wednesday, November 27.

 

Chanukah is observed for eight nights and days.

As the leaves begin to turn, the weather cools and the evenings close in, our thoughts turn to our autumnal rituals. For some that's football, or the first wood fire of the year. For others, 'tis the season for homemade barbecue!

 

Thanksgiving falls on November 28th. It means many things to different people, but for most people this holiday is synonymous with festive meals, family and friends, and of course, turkey. The Thanksgiving holiday is a reminder to give thanks for the good things, people and providential events in our lives. Some families make Thanksgiving dinner special by outdoor barbecuing or grilling their Thanksgiving turkey. There will be no mess in your oven or the kitchen. A whole turkey may be prepared on either a gas grill or a charcoal grill. This method requires a covered barbecue grill and heavy duty aluminum foil. Your turkey will be crisp outside and juicy inside.

BBQ Turkey

For an extra teat, try Gayle's Sweet'N'Sassy Barbecue sauce as a dipping sauce for your Turkey or for leftover turkey sandwiches.

 

How to Barbecue or Grill a Whole Turkey

Turkey cooking time: 20 min per pound


Ingredients:

1 (15 to 20 pound) turkey, fresh or thawed, with giblets and neck removed. Clean turkey well, removing any bits of pin feathers and cleaning the cavity of any remaining pieces of innards. Pat dry with paper towels.

1/2 cup room temperature butter.

Your favorite stuffing/dressing recipe.

Imagine a way to get great flavors deep inside the meat of a turkey. That's where injection sauces come into play. Sauces, rubs and marinades can only go so far, but an injection gets right to the center of the meat. By using a meat injector flavors can be combined and injected straight into the thickest parts of the bird.

Meat injectors are basically a hypodermic needle with a large gauge needle. Use this syringe to place small amounts of sauces into thick parts of any meat before cooking. Whether grilling, smoking, frying or roasting a turkey this is the best way to get extra moisture and flavor into the deepest parts of the meat.

 

To make this work and to get the most from your injection sauce, start with a liquid that doesn't contain anything that might clog up the needle. Avoid flaky herbs, crushed garlic or anything else that might have a tough time getting through the needle. Good things to look for seasoned oils, vinegars, finely crushed spices, wines or beers, and of course, Gayle's Sweet 'N' Sassy BBQ Sauces!

 

Secondly, make sure to spread out your injection pattern. You want to get small amounts of the solution into as many places as possible. Also, aim the needle to the middle of the meat. If you over shoot, the sauce will just slip through to the other side of the meat. If you don't get it in far enough it will seep out the hole it went in through. One tip is to think about making 40 injections instead of 4.

 

On a final note try not to overpower the flavor of the turkey. You might be tempted to add a lot of hot sauces or cayenne and end up with a turkey too hot to eat. Go with subtle and mild flavors or use strong flavors in small amounts. Remember you want to enhance the flavor of your turkey, which is what Gayle's sauces are best known for!!!! Enjoy!
