HOT OFF THE GRILL

Gayle's Sweet 'N' Sassy Newsletter

Dear (Contact First Name),

Halloween is celebrated with family, friends and co-workers. Adults may celebrate by watching horror films, holding costume parties or creating haunted houses or graveyards.

Children dress up in fancy costumes and visit other homes in the neighborhood. At each house, they demand sweets. If they do not get this, they threaten to do some harm to the inhabitants of the house. This is known as "trick-or-treat".

It's probably a good idea to get some real food in them before the bags of candy start being replaced with bags of empty wrappers. Believe it or not the grill is not the only way to put together something hot and satisfying, quick and easily. Gayle's Barbecue Sauce can be used as a marinade for chicken, steak, ribs, and fish. And of course you can always use it as a dip for healthy vegetables or chips. So consider a fun family meal before or after the kids hit the streets.

This year for Halloween, try making our specialty Halloween pizzas that kids are sure to love. If you use cheddar cheese instead of mozzarella you get a pumpkin face for the kinds to decorate with black olives, pepperoni, red, orange and green bell peppers or whatever else you like on a pizza. They'll have a blast topping their own pizzas. And for an extra extra treat, use Gayle's Sweet'N'Sassy barbecue sauce instead of plain tomato sauce. It's the perfect "treat" for the entire family!

Enjoy! Gayle

Hot Dog Mummies

Ingredients
One 16-ounce package bun-size hot dogs (8 hot dogs), each halved crosswise
2 ounces Cheddar, cut into 16 thin slices
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
8 sheets phyllo dough
4 ounces (1 stick) unsalted butter, melted
Gayle's BBQ Sauce

Directions
Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper. Cut a slit in each hot dog piece and stuff with a slice of cheese. Set aside. Combine the salt, garlic powder and pepper in a small bowl.

Working with one sheet of phyllo at a time and keeping the rest covered under a damp towel or paper towels, lay a phyllo sheet on a large cutting board or counter and lightly brush with melted butter. Lightly sprinkle with some of the spice mix and fold in half lengthwise. Brush the top with more melted butter and cut into 1/2-inch-thick strips. Using 2 pieces of stuffed hot dogs per phyllo sheet, wrap half of the strips around each piece of hot dog to create a mummy look. Leave a small section of hot dog exposed towards the top so it looks like the top part of the face peeking out from the phyllo wrappings. Don't worry about frayed edges or tears-- it will add to the mummy look.

Place on the prepared baking sheet and repeat with the remaining phyllo, melted butter, spice mix and hot dogs. Remelt the butter if it cools down too much while forming the mummies.

Bake until the phyllo is crisp and golden brown, about 25 minutes. Dot BBQ Sauce "eyes" on each mummy using a toothpick and serve with extra sauce for dipping!!

Sweet N Squirmy Sandwiches
Ingredients
6 strips bacon, chopped
One 14-ounce package foot-long Hot Links, each cut into 6 strips lengthwise
3 medium red and/or yellow bell peppers, cut into 1/4-inch-wide slices
1 large red onion, halved and cut into 1/4-inch-wide slices
2 cloves garlic, chopped
1/2 cup Gayle's Sweet 'N' Sassy BBQ Sauce
1/4 cup chicken broth
1/4 cup packed dark brown sugar
1 tablespoon yellow mustard
1 tablespoon hot pepper sauce
6 hoagie rolls, split
12 slices provolone

Directions
Cook the bacon in a 12-inch nonstick skillet over medium-high heat, stirring frequently, until crisp, about 6 minutes. Transfer to a paper-towel-lined plate to drain.

Cook the hot links in the same skillet in 2 batches over medium-high heat, stirring frequently, until curled, about 3 minutes. Transfer to a paper-towel-lined plate to drain. Preheat the oven broiler.

Cook the peppers and onions in the same skillet, stirring frequently, until soft, 8 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds.

Stir in the Gayle's BBQ Sauce, chicken broth, brown sugar, mustard and hot pepper sauce. Bring to a boil and reduce the heat to medium. Cook, stirring frequently, until the sauce begins to thicken, about 1 minute. Add the hot links and continue to cook, stirring, until coated, about 1 minute. Remove from the heat.

Toast the hoagie rolls in the broiler if desired. Arrange the provolone slices in the rolls and broil 30 seconds to melt. Top with the hot link mixture and sprinkle with bacon.

Sassy Sliders
Ingredients
2 tablespoons olive oil
1 large onion, thinly sliced (about 3 cups)
2 chipotle peppers in adobo, finely chopped
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 1/2 pounds ground beef
4 ounces pepper jack cheese, cut into 12 equal pieces
1/4 cup Gayle's Chipotle BBQ Sauce
1 tablespoon balsamic vinegar
12 slider-size potato buns, split and toasted

Directions
Heat the oil in a large skillet over medium heat and add the onions, spreading them into an even layer. Cook, without stirring, until the edges of the onions are beginning to brown, 5 minutes. Stir the onions and continue to cook, stirring occasionally, until browned and caramelized, another 20 minutes. Add the chipotles, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook until fragrant and well combined, 1 to 2 minutes, and remove from the heat.

Preheat the oven broiler. Divide the meat into 12 portions, about 2 ounces each. Form a patty around each piece of cheese and flatten to 2 1/2 to 3 inches in diameter. Put the wrapped patties on a foil-lined baking sheet and sprinkle all the patties with 3/4 teaspoon salt.

Broil until the cheese is melted and the burgers are still a bit pink inside, about 6 minutes. The burgers will be cooked to at least medium in order to melt the cheese but still stay juicy.

Mix the Gayle's Chipotle BBQ Sauce, balsamic and 1/4 teaspoon pepper in a small bowl. Brush the burgers with some of the sauce mixture and divide the rest among the bottom halves of the buns. Place a burger on each bottom bun, top with some of the spicy onions and finish with a top bun. Serve warm.

12 Halloween Tips to Think About...
Pumpkin Carving...There are few things associated with Halloween as much as carving a Pumpkin, but it can be extremely dangerous for younger children. As an alternative to carving, you can consider allowing your younger kids to use markers, paint, or a pumpkin decorating kit without the risk of pumpkin carving with a sharp blade.

Wearing a Mask...If you, or your child, are planning to wear a mask for your spooky night out, make sure that the holes for the eyes are large enough to clearly see both straight ahead and peripherally. You may have to cut the eye openings larger to allow more visibility. If any skin starts to show through the enlarged holes, you can always use some black face paint to cover the exposed areas of the skin.

Candy from Strangers...The only time of year you allow your kids to take candy from strangers, you can never be too careful. Make sure your kids understand not to eat any candy or treats until they have properly examined by you. This allows you to check for any possible tampering with the candy wrappers; and at the same time, you get a chance at the first pick of candy!

Be Seen!...Halloween is spooky enough outside without having to worry about your child not being seen in the dark while trick-or-treating. Prepare your child's costume for strong visibility at night by choosing a costume that can be made with bright materials. If the theme of the costume does not allow for bright colors, add reflective tape to your child's costume or treat bag.

Watch out for bad monsters...Sometimes there are monsters out that are more mean than spooky. Never let your kid go into a stranger's house or even ring their doorbell for treats unless you are with them or say that it's okay. There are some people in life that are not very nice to kids and you have to be very careful.

Stay Away From Haunted Houses...Ensure your kids only visit houses with lights on. And, you might also suggest the houses they visit have some sort of Halloween decoration on the porch. Make sure your kids don't go inside someone's house. They can get their candy from the porch.

Monster Route...Sometimes a lost or missing child can be scarier than a thirsty vampire, for both you and your child. Know the trick or treat route your kids take, especially if you are not going with them. Have them check in regularly, by phone or by stopping back at home and make sure they do not deviate from the preplanned trick or treat route so you will always know where they are and will be.

Spooky time flies quickly...Time always passes quickly when everyone is having fun. Always set a time that you expect your kids to be home and make sure they know how important it is for them to be home by that time. You can also make sure they know to call immediately if anything happens that might make them late.

Take the Long Way...Trick-or-treat only in well-lit areas. Stay on streets that you are familiar with, and avoid taking shortcuts through parking lots, alleys, and pathways. If you're not sure where a street goes or whether it is safe, don't take a chance on it.

Watch out for fast moving Mummies and Zombies...Watch out for fast moving Mummies and Zombies! Always drive well below the posted speed limit in any residential area during trick-or-treating hours. You always want to make sure you have extra time to break if a child darts in front of your car.

Halloween should be safe for ALL your little monsters...Halloween should be safe for all your little monsters. As much as your pets may beg for candy or treats, remember that chocolate can be deadly, in any amount, if ingested.

Hungry Zombies are a scary thing...A hungry Zombie can be a scary thing. A good tip to prevent your kids from overloading on candy is to serve them a very filling meal before they go out for their trick or treating - it helps to make them a fun favorite dinner that spooky night!
