Lil Gayle's Recipe Corner!  

Think hot dogs are just for kids? Think again! We just celebrated National Hot Dog Month and there are sooo many new ways to enjoy America's favorite dog!

Have you ever tried simmering hot dogs in BBQ sauce BEFORE grilling them rather than putting BBQ sauce on afterwards? Of course both ways are delicious but if you would like to try something new and sassy, try this delicious recipe! 

 
BBQ Barbecue Hot Dogs 
Ingredients:
Hot Dogs, Hot Links or L'il Smokies
1 bottle Gayle's Sweet 'N' Sassy BBQ Sauce
Buns or French Rolls
Other condiments and fixings can include onions, chili, tomatoes, cheese, avocado, etc.
 
Instructions:
Simmer hot dogs in BBQ sauce for 5 minutes or until sauce is warm and bubbling. Transfer dogs to the grill... if you are using L'il Smokies, you can just continue to simmer in sauce and serve immediately.

Toast buns for 2 minutes on grill as dogs are getting nice grill marks... serve on bun with fixins, including more Gayle's BBQ Sauce!

Gayle's Meatball Sliders... 
Ingredients
1 bottle of your favorite Gayle's BBQ Sauce

For the meatballs:
1 pound ground beef
1 pound ground sausage (preferably spicy pork)
1/2 cup finely chopped onion
1/4 cup minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh parsley, plus more for garnish
1 large egg
1/2 cup grated parmesan, plus more for garnish
1 cup panko breadcrumbs
12 ounces ricotta cheese
2 teaspoons kosher salt
Olive oil
33 slider-size potato buns, toasted

Directions
To make the meatballs: Preheat the oven to 450 degrees F. In a large bowl, mix the beef, sausage, onion, garlic, thyme, parsley, egg, parmesan, breadcrumbs, ricotta and salt with your hands. Form 1 1/2-inch balls out of the meat mixture. Heat a large ovenproof skillet (preferably cast iron) with a bit of olive oil. Working in batches, addthe meatballs and brown on all sides, about 4 minutes. Return all the meatballs to the skillet and place in the oven to finish cooking, 10 minutes.

Toss the meatballs with 3 cups of Gayle's BBQ Sauce. Place on the toasted slider buns and sprinkle with parmesan and parsley.

Amazing End of Summer Side Dishes...
Herb-Stuffed Zucchini 
Split 2 medium zucchini and scoop out the seeds; season with salt. Combine 1/3 cup panko breadcrumbs, 1 chopped tomato, 1/4 cup mixed chopped parsley and dill, 2 tablespoons chopped walnuts, 1 minced garlic clove, 2 tablespoons olive oil, and salt and pepper to taste. Spoon into the zucchini; drizzle with olive oil. Bake at 425 degrees F, 25 to 30 minutes. 



Pasta Caprese...
Ingredients
1/3 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 shallot, minced
1 small clove garlic, minced
Kosher salt and freshly ground pepper
1 teaspoon sugar (optional)
2 pounds mixed heirloom tomatoes, cored, seeded and cut into 1/2-inch pieces
1 pound pasta, such as campanelle, penne or fusilli
12 ounces fresh mozzarella cheese, cut into 1/2-inch pieces
1/2 cup chopped fresh basil
1/2 teaspoon grated lemon zest

Directions
Whisk the olive oil, lemon juice, shallot and garlic in a large bowl. Season with salt and pepper. Add sugar, if desired (depending on the sweetness of your tomatoes). Add the tomatoes and gently toss. Marinate at room temperature, about 15 minutes.

Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain in a colander and run under cold water to stop the cooking.

Add the pasta and mozzarella to the tomato mixture and toss. Stir in the basil and lemon zest, and season with salt and pepper. Refrigerate, tossing occasionally, until serving.
