Lil Gayle's Recipe Corner!
Red Snapper with Gayle's BBQ Sauce
Rinse 2 lbs. of red snapper pieces and pat dry with paper towels.
Preheat oven to 350 and get a skillet warm with olive oil or canola oil (which ever you prefer).
Get three shallow bowls. Put half a cup or so of white flour in first bowl. Scramble two eggs in the second bowl. (add a splash of water in eggs). Put half panko bread crumbs and half Italian (or whole wheat) bread crumbs in another bowl. (I like Whole Foods bread crumbs).
Take one piece of red snapper and dip in flour, then eggs, then bread crumbs. I think wet (fish), dry (flour), wet (eggs), dry (bread crumbs).
Put in hot pan and crisp one side. About four minutes and then the other side. Four minutes.
Put in baking dish. Then continue with all the fish pieces until all in the baking dish. I bake for about 23 minutes or so. I like the fish totally cooked. I watch it.
Let cool. Serve with Apple Cider Smoke or Honey Sweet or Extra Sassy Gayle's and watch it all disappear in less than five minutes! |
