With Valentine's Day fast approaching the air waves are full of chatter about how best to celebrate. The match making services are ready to help you find a Valentine in case you don't have one of your own. One commercial has a sincere looking gentleman promising to help you find your one and only "soulmate." I laugh and think back to my college days when all the guys felt your soulmate would be the person you were with when it was the right time for you to get married. Sort of like the CSNY song, 'Love the One Your With.' What can I say, we were young and stupid. I have since learned that it's really only time to get married once you love the one you're with.

 

Unfortunately, I never got to meet my grandfather. My grandmother lost her husband at the young age of 47, just months after my mother got married. I remember in my twenties, sitting and talking with my mom and grandmother, when my mother said something disparaging about her father. Wow, was I surprised! To this day, I can see the scowl on Nana's face when she snapped, "Don't you ever speak like that about my husband." It was close to 30 years after he passed, but the bond between those two people was still alive and strong. Perhaps the idea of a "soulmate" is not so ludicrous after all. I believe Carole and I share this bond. I hope my 3 boys will feel this way too.  

 

This year Valentine's Day is on a Saturday. While I would never discourage visiting Huntington's many great restaurants; this weekend may give me pause. I tend to shy away from too much hub bub. We get enough of that here at the bakery. Peaceful and serene are more what I'm looking for. If you are like me and want to skip that scene I'm including a perfect Valentine's recipe for our take on individual Beef Wellington. Besides the individual filet mignons (R+S Meats on Wall St would be a perfect spot for that purchase) the next most important component is the pastry wrapping. Reinwald's Bakery can help you out with that. We will be offering pre-rolled square pastry dough pieces just perfect to wrap up the prepared meat.

The cousin of the traditional brownie, based on brown sugar instead of chocolate. Reinwald's Blondies are made with walnuts and white chocolate chips. Delicious treat great for kids and adults alike.

Beef Wellington        


Ingredients:
  • 2 individual filet mignon pieces
  • 1 cup med mushrooms
  • tbs  butter
  • 1/2 small onion minced 
  • 1/2 cup bread crumbs 
  •  pepper and salt to taste
  • pinch thyme
  • pastry dough
  •  3-4 slices cooked bacon  
Preparation:
  1. Remove stems from 4 mushrooms and set aside.  Mince remaining mushrooms and extra stems

  2. In a 12" skillet cook minced mushroom and onions in butter 5 min till all liquid evaporates

  3. Stir in bread crumbs, pepper, thyme, and salt. Cool

  4. Chop bacon and add to above

  5. Roll Pastry into rectangles.

  6. Place  1/2 of mushroom mixture on top of each pastry.  Top with meat.  Sprinkle salt on top and add whole mushroom from step 1.

  7. Cook in Oven at 400°.  Bake 25 min for rare and 27 min for med. Enjoy!
