Fall is here and that means it is time for pumpkins. Our Pumpkin Pie is a definite favorite here in Huntington. pp slice

Fresh sliced apples with an almond sponge in a cookie crust.

Next is a new fall item.
Apple Cider Bread.

A slightly sour dough made with apple cider and whole wheat flour.  Contains chunks of apples and dried cranberries.

Caramelized Bananas with Custard.

Caramelized bananas in a baked custard with a graham cracker crust and a layer of vanilla sponge cake. 

 

          On Sunday, Carole said to me, "you do know it is October don't you? Where is the October newsletter?" The past few weeks have been difficult with an out of state wedding and then my shop production manager took his vacation. When someone goes on vacation, I like to fill in to sort of keep my finger on the pulse of the various jobs.  Last week my creeping up of age showed. Between the getting up at 3am and the heavy lifting of 100 lb. sacks of flour and full mixing kettles, I went home pretty tired every day. I guess I learned a lesson. The rye bread is made in 100 lb. batches and lifting them out of the kettle is not like throwing the fish around at Seattle's Pikes Market. What I use to be able to do with ease, my 60+ year old body does not do so easily anymore.

   

              Yes I do know it is October. I got a clue when, as Mark Twain put it, I was taking a "walk in the park spoiled", and saw a few trees showing signs of red and gold. The other morning it was 42°. I guess I don't have to plant those last few marigolds.

          A drastic change happens at the bakery with the calendar changing to October.  The fresh peach and plum cakes are finished. Apple pies,pumpkin pies, and pretty much anything pumpkin  is the order of the day.  In that vein, we are featuring our pumpkin pie as a Sweet Treat item.  Pumpkin is kind of a bland fruit, but it is the spices that give it, it's true flavor.  Many places buy a pumpkin pie spice blend and thus most have the same taste.     

          An old baker from Westchester had really good pumpkin pies  and when I asked him about it, he said, " It is all about the flavor and texture. I have my own special mixture of spices that I guard with my life".   When I inquired if he would be willing to share, he said "Absolutely not!". That was that.  Well, a few years later, he came up to me at a meeting, and quietly on the side, grabbed my hand and put a little scrap of paper in it.  He said, "  I like you, use this " and walked away. Of course, it was his proprietary spice blend that I have used ever since.  The other part of a good pumpkin pie is the texture.  Reinwald's Bakery uses heavy cream in our pies that give them a silky smooth finish across your taste buds.      

            Since it is apple time across N.Y. State, we are also featuring  two apple items.  The first is an Apple Flan.  It is a butter cookie crust with a thin layer of frangipan filling with fresh apples laid in concentric circles.  Simple and tasty. The other item is Apple Cider Bread with dried apples, cranberries and of course, apple cider.  

            The last item on this month's menu is a caramelized banana cream dessert en glass.  Think banana"s forster with fresh pastry cream.

           Customer's always ask me what is my favorite thing to take home.  It always changes with the season.   Right now, hands down, it is the pumpkin pie.  I can picture myself at home, yellow and orange mums around the fireplace, a cup of tea with rum, and my wife at my side.  I hope it is cold tonight.

New Mugs

Reinwald's Bakery would like to introduce our collection of hand thrown coffee mugs.  We will be having different shaped and different colored mugs for the various seasons.  Each mug is hand thrown in the USA. Last year we took a trip to Sanibel Island and enjoyed a breakfast at a small cafe. The coffee was served in a neat cup and as is my habit, I looked on the bottom to see where it was made. I was so relieved to see U.S.A. instead of that other place. I resolved to get those cups for the bakery to share with our customers. Check out the story behind the cups.  For more info...   These mugs keep your drink hot much longer and feel great in your hand. It is my mug of choice for those slow sipping evenings in front of the fire.
 

 

 

Hoover Dam

This month instead of a recipe, I would like to share with you a few pictures I took at the Hoover Dam.  A very disturbing scene.
     The wedding we attended in the end of September was held in Las Vegas.  Because of flight complications,  Carole and I stayed an extra day.  Every 3 years there is a big bakery show in Vegas, but in all the times I was there, I had never been to the Hoover Dam.
      Carole and I decided to take the best dam tour available and were glad we did.  This project completed  in 1935 is compared to the building of the pyramids.  I believe it surpasses it.  Not only is it a mammoth structure, it has an art deco flair to it, which makes it even more impressive.  The dam was dedicated on September 30, 1935 more than two years ahead of schedule and under budget.  Compare that to the picture of the bride spanning the canyon, past schedule and over budget.
        We took an elevator down over 500 feet of the total 726 feet to see the turbines that generate electricity to millions of people and industries.  We were lucky that one of the turbines was out of service for maintenance.  Very, very impressive to see the insides.
We then took a walk top-side and took the pictures posted here.  Very, very disturbing.  You can see the high water mark outlined on the canyon wall.  It is currently at 40% capacity and it's future capacity to generate electricity is in jeopardy.    
         This is a water issue pure and simple.  While regional in nature, this issue is of national importance.  The Great Lakes are at their lowest levels in 100 years.  Water is the world's most precious resource and the United States is blessed with the best in the world.  I think we often take it for granted.
         The corn to ethanol equation is very dependant on water and land use.  That our government incentivies and  mandates ethanol production with it's intense waste of our 2 most important natural resources boggles my mind.
