This Friday is July 4th, Independence Day. Across the country celebrations take different forms. Many small towns have town wide festivities that bring people together. Some of the representative scenes in Meredith Wilson's "The Music Man," are not too far off. Of course being close to New York City we go for the big extravaganza and the Macy's fireworks show. But it wasn't always so here in Huntington. Imagine Main Street festooned with red, white, and blue bunting and all the people of Huntington gathering on the village green. The excitement was contagious. Veterans from the past wars at the ready to march, showing their local colors. The year was 1903.

President Teddy Roosevelt is coming to Huntington to help celebrate the 250th Anniversary of our town. Citizens were both incredulous and honored to have a president addressing them. Civil War veterans escorted him to the podium. The President spoke of remembering past sacrifices and the obligation of handing down to our children the understanding of what has come before. "Only by doing so can we show that we have the right to celebrate this day that marks the birth of a nation."

Do we have that same understanding of the 4th of July that President Roosevelt spoke of that day? The President's passionate speech spurred 4 ladies to come together to make sure future generations could share the knowledge of what has come before. What makes the 4th of July so special that it hasn't been moved to a Monday? The answer lies in our history.  Special thanks to those four ladies for recognizing that and forming what is today the Huntington Historical Society. It has been said that the path to the future is illuminated by an understanding of the past. This is a lesson our children need to learn.

Reinwald's Bakery is open until 3pm on July 4th. We have many items to help create your celebration. Many of you say we have the best donuts anywhere. The entire month of June we had our jelly donuts on special and we added even more fans. For the 4th of July we will be making a celebration donut. It is 9" round and decorated in the red, white, and blue. Don't forget our Hot Dog and Hamburger rolls. These are rolls not buns; what you see in the supermarket. Ours are made from a rich egg dough and have some substance to them. Much better for a real hamburger right off the grill.

Please enjoy your days and God Bless America,
Sincerely, Rich Reinwald

ps.  Carole will be performing with the Senior Pops on July 3rd at Hecksher Park.  There will be some invigorating patriotic music.  Hope to see you there.

Southwestern Beans

I made this recipe as a side dish to pork tenderloin, but it easily could be used as a quick and nutritious dinner.

Ingredients
:

2 cans cannellini beans
1 bunch fresh cilantro
juice of 2 limes
3-4 garlic clove
2 Tbs olive oil
1 Tbs butter
2-3 links chorizo
salt, pepper, onion salt, chili powder, 1 shake of cayenne pepper

Preparation

Rinse canned beans well and let drain thoroughly.  Finely chop garlic, juice limes and loosely chop cilantro.  Roughly dice cilantro.

Heat oil and butter and saute garlic till fragrant.  Add the beans and then chorizo.  Stir lightly to evenly mix with garlic.  Cook for 2 min.

Add seasoning and 1/2 of cilantro and 1/2 of lime juice.  Stir lightly and cook for about 3 more min.  You would like to lightly brown the beans.

Shut off the heat then add the rest of cilantro and lime juice.  Stir and serve.
