This year we will be offering our 3 Pie Sampler to all Sweet Treat Rewards members. Get your Thanksgiving order in early and as a reward we will be offering 3 Pies for $21.95  That's less than a dollar a slice.

Last Day for placing Thanksgiving orders is Saturday Nov. 23rd.

Made with pumpkin puree, pumpkin seeds, and cranberries.
 
Since its November we have more pumpkin! Next is a Pumpkin Spice Loaf

This is a very moist pumpkin cake with our own blend of spices.

Next we have a few products made without Gluten.

Made with only egg whites,  sugar, and natural vanilla, these are simple, yet delicious treats.    

 

              November begins the celebration of the holiday season. It is a time of renewing family traditions and reconnecting with friends. We all try to have a welcoming home and be a gracious guest to our hosts if visiting.

               People always ask me where I get my newsletter ideas from. My answer is everywhere. I do a lot of reading; conversations with customers and chance happenstance that may jar a long ago memory. All that said, the writer's block monster sometimes rears its ugly head. I was saved this month by a trip to the supermarket. Walking down the aisles  the other day, an employee was unpacking cases of frozen pies. I asked what are they doing with all those pies. His reply was, "Thanksgiving is coming." I picked up a box that said 'Apple Pie.' In a yellow starburst sticker it was printed "Made with real Apples." Huh? On the bottom of the box there was a stamp that said, "Best if used by November 2014." Huh? I then checked the pumpkin pie box to see if there was pumpkin in it. I can report there is pumpkin in the pumpkin pie; but also a lot of other stuff, most of it I can't pronounce. Can you imagine walking into your host's home with that potential food bomb?

                 A recent magazine article trumpeted "the new importance of food." It said people are beginning to realize what they put into their bodies affects not only their biological functions, but the mental psyche as well. Food has always been important at Reinwald's Bakery. Our bakers have over 200 years experience. We have two certified Master Bakers, still a baker trained in Europe, two graduates from CIA, one from Johnsons and Wales, and a bunch of family members that have grown up in the bakery business. All of them can't understand how someone can make an apple pie without 'real apples.' None of us would be thinking of making an apple pie a week ahead of time, never mind a year. Our pumpkin pie has a lot of ingredients. However, you are familiar with them all: Pumpkin, sugar, eggs, milk, heavy cream, honey, molasses, flour, corn starch, sweetened condensed milk, and our own spice blend.

                  Last year I saw an elderly gentlemen walking back into the bakery with a tray of cookies. Anticipating a problem I asked him if anything was wrong. He told me his wife sent him back to get a replacement tray. Again I asked him what was wrong; the tray didn't even look like it was opened. He said to me, "You don't understand. We are going to my daughter in law this afternoon and this tray doesn't have the ribbon on it that says Reinwald's. My wife wants to be sure my daughter in law knows we came to you. We need a Reinwald's ribbon on this tray." I could have hugged him. All of us at Reinwald's Bakery feel honored to have our baked goods on your holiday table.

                 The first weekend in November, we were asked to make a special apple pie for wedding favors. What we came up with was an apple pie with a specially formulated oatmeal butter crunch topping drizzled with caramel. This was so outrageously delicious that we decided to feature this crunch and caramel apple pie this Thanksgiving.

Gluten Free

One of the things I appreciate about Huntington is it's diversity. It enables the bakery to bake a wide range of product that is special to various groups. In addition to these cultural specialties we have been asked to address certain health concerns and food allergies. Because of our large variety, many of these concerns are a  challenge for us.

      A prime example of this is peanut allergies. Reinwald's Bakery is "peanut free". We do not use any peanut based ingredients. However, you can imagine our dismay when opening a box of coconut and the label says may have been produced in a facility that also processes peanuts. Therefore we cannot declare that we are 100% peanut free. We must rely on the consumer to make that final choice.

 

     Today, many people are concerned about their intake of gluten. Gluten is a form of protein in many grains. Wheat, of all grains, has the most gluten. Rice may have the least.People with Celiac's disease show the most virulent reaction to gluten. Others have been advised that they may be gluten intolerant. Some people have made a lifestyle choice to forgo gluten from their diets.  In an effort to accommodate those who want to lower their intake of gluten, Reinwald's Bakery offers quite a few items made without any added gluten or flour. Each month  going forward, the Sweet Treats program will feature several of these products. If you are looking to limit  your gluten intake these items may satisfy you and by the way taste great.

     We must add this caveat. WE ARE NOT A GLUTEN FREE FACILITY. Flour, the main gluten containing ingredient, is easily airborne. There is a possibility of incidental transference. If you are moderately to severely allergic to gluten, I would not recommend these products.  You must be the judge. Check the side panel for this month's selections.

Pumpkin Ravioli


This dish makes for a nice Thanksgiving appetizer.  Homemade ravioli seems like a big task, but it can be done pretty easily.  Being German I did not make my own pasta.  I went to Mr. Sausage in town and picked up some fresh pasta sheets.  You could also get wontons from the supermarket for an easy alternative.

Ingredients:


Filling:

15 oz pumpkin puree

15 oz ricotta

1 egg slightly beaten

2 tablespoon melted butter

salt, pepper, sage, thyme to taste 

 

Sauce:

2 shallots chopped

1/2 tablespoon butter

3/4 cup white wine

1 cup chicken stock

1/2 cup pumpkin puree

1/2 cup heavy cream

salt, pepper, sage, thyme, nutmeg, and clove

 

 

  

Preparation:

Mix all ingredients of filling and scoop onto pasta sheets.  Form ravioli and boil like you normally would. (Or bake the wontons at 425�) 

 

Sauce: Melt butter and lightly saute shallots.  Add white wine and reduce until shallots are just wet in pan.  Add chicken stock and continue cooking until reduced by 1/2.  Whisk in pumpkin puree, salt, pepper, sage, and thyme to taste and then just 1/2 pinch or small tap of nutmeg and pinch of clove.  Stir in heavy cream and cook until hot.
