Sweet Treat Rewards

As we all de-compress after the holidays, this month our Sweet Treats will be kept simple. We will have two items. The first is 20% off any variety of cupcake. Choose from red velvet, carrot cake, or even a simple vanilla cupcake with a raspberry or chocolate filling, plus countless more

The second item is 20% off our French baguette. The crusty outside and mellow center is a perfect accompaniment to many a winter meal. It will match well with our recipe of the month, Reinwald style meatballs and egg noodles.

                Welcome to 2013 and a belated Happy New Year to all. I am sorry for the tardiness of this month's newsletter, but the recovery time from the holiday season was a bit longer this year. My father used to say, "The holidays take the starch out of me."

                Today is January 8th. It is Elvis Presley's birthday. Also, thirty five years ago today on a snowy Sunday, Carole and I were married. That was just a week after New Year's and I remember being full of energy and promise. I guess a good resolution is to re-create those attributes, of course within today's physical boundaries.

                Carole and I have been in the baking business those entire 35 years. We still enjoy seeing the youngsters coming in excited in celebrating their many firsts. We still enjoy the smile on the birthday boy or girl's face. We still enjoy the look of satisfaction after a bite of bread or a dessert at the end of a meal. I must admit sometimes we don't enjoy the paperwork, the regulations to comply with and dealing with all the everyday problems of running a business. We don't enjoy being portrayed as merchants of death; that the bakery is a major contributor to childhood obesity and the onset of many diseases. I have seen a Dr. Oz segment where he referred to a table of baked goods as "poison."

                I was very bewildered therefore, when reading an article by Dr. Oz, when he referenced his childhood's fondest memory being a weekly Sunday trip to the ice cream store with his father. "It, in fact, is where I decided to become a doctor."

                This brings me to a point I have been trying to broadcast for years. The definition of "health" is "being of sound body and mind." A jelly donut or two a week can be satisfying, a dozen or so a week and what are you thinking. In study after study, happiness and a sense of tranquility are the keys to a long life. I would propose that the mission of Reinwald's Bakery is to arouse your senses, delight your taste buds, and satisfy your soul. In my book, a few calories are worth it.

King Cake
King cake

 For the first time Reinwald's is making the traditional King Cake.  This treat celebrates the Epiphany or El Día de los Reyes.  The cake takes its name from the biblical 3 Kings who came bearing presents.  After discussing the cake with some of friends in the baking industry from New Orleans, we decided to try it out this year.  Please call ahead to schedule a pickup, makes a great office breakfast treat.

Reinwald Style Meatballs


Ingredients:

 

Meatballs
1-1 1/2 lb. chopped meat
1 egg
1/2 onion chopped (reserve about 1/3 for gravy)
1 Tablespoon parmesan cheese
2 oz. very small cubed monterey jack cheese
2 drops Tabasco sauce
salt + pepper + paprika
plain bread crumbs

Gravy
1 clove garlic
1/3-1/2 cup red wine
1 cup beef broth
1 tablespoon flour
1/2 cup mushrooms

  

Preparation:

 

Reserve about 1/3 of chopped onions for gravy.  Combine all other ingredients except bread crumbs in a bowl.  Mix and add bread crumbs just until you have a mixture that will be dry enough to ball.  Don't make them too dry.  A little sticky is okay.  If you like more of a kick add a few more drops of Tabasco and cayanne pepper. 

 

 

Heat saute pan over med-high heat and coat pan with olive oil.  Drop in golf ball sized meatballs.  Sear on all sides until nicely brown.  Remove from pan and set aside. 

 


Add onion, chopped garlic to pan, if needed add a bit more oil.  Add mushrooms for about 2 min then add wine.  Let it reduce for 3-5 min then add beef broth.  Season with salt, pepper, and paprika.  Whisk about 1/3-1/2 cup beef broth and tablespoon flour and whisk into boiling stock.  Return meatballs to pan.  Serve over egg noodles with perhaps carrots as a side.
