Greetings!    

 

          Unlike most stores, the Christmas season at the bakery only starts after Thanksgiving. Up to then it is pies, pies, pies. Then we switch gears and start on out famous cookie trays and traditional German Christmas items that have been passed down thru the generations of Reinwalds.

            Personally the Christmas season doesn't start till after Thanksgiving for me either. I sort of enjoy the hustle and bustle and playing it by ear shopping than the calculated planning that many start as early as August.

           Over the past years I have advocated, cajoled and pleaded for everyone to take a look at local, community based stores. I've must have been on to something because now some of the "big boys" have extolled the virtue of local shopping too. American Express and Optimum Online come to mind. They are right of course. These stores (including the bakery) help make Huntington special. Many a unique item can be found strolling through our village. Gifts of food and specialty baked goods are shown to be greatly appreciated. The bakery has made some gift boxes with a nice assortment of our specialties plus a free bonus on all gift boxes purchased before December 16th.

              Please check out our special holiday hours below. This year Christmas Eve is on a Monday. The bakery is normally closed on Mondays, but we will be open Mon the 24th from 6:30 am until 4pm. I hope to see many of you over the next few weeks, but if not please accept our warm wishes for a joyous December.

                                Braised Short Ribs

It is a Christmas Eve tradition in the Reinwald house to make braised short ribs.  We make German spaetzle with this but you can also use egg noodles. 

Short Ribs


Ingredients:

7 Short ribs (have butcher cut into 1/3rds)
Flour to coat short ribs
1/2 onion, chopped
2 clove garlic, chopped fine
3 tablespoon Vinegar
1/3 cup Brown Sugar
2 tablespoon Ketchup
1 can (14.5 oz) Diced Tomatoes
1/4 Cup Beef Broth
2 tablespoon Oil


Preparation:

Coat short ribs in flour.  In large skillet heat oil and brown meat on all sides.  Remove meat to bowl as it is browned.  Add a bit more oil if needed and sautee onion and garlic.  Give the onions a head start as they take longer than the garlic.

Add meat back in and add broth, tomatoes and then sprinkle meat with vinegar and then the brown sugar.  I squeeze the ketchup right on top of the meat also.  Bring to simmer and cook for 2-3 hours in covered pot. (alternate option dutch oven)

Remove meat to platter.  Remove most of the fat and make a gravy with a tablespoon of flour whisked into a 1/4 cup water, add into de-fatted braising liquid.
