Greetings!

   Once again, May was a whirlwind month with KSU graduations, weddings, hellos and goodbyes. In addition to the festivities, one highlight of the month for us was being voted Mahattan's #1 Bed & Breakfast by readers of The Manhattan Mercury. Thank you to everyone who voted for us!
    Manhattan is now in summer-mode, even though the weather is still hanging on to spring. There are quite a few local events coming up in June. It should be a fun month with all of the activities! I hope that you get to enjoy some of them!
Musicians
Beautiful Music
For a recent event at The Morning Star, we arranged to have a Bluegrass Trio play music on the porch. It was delightful and the musicians were so talented. Anne, the fiddle player, also happens to work at the B&B ... rather lucky for us! We hope to be able to have the group play at more events. Wouldn't that be nice? 
Dad's Favorite Chocolate Chip Cookies
Dad's Favorites
Makes about 24 cookies

  This is a recipe that I created for my father, who believed in adding orange zest to just about anything edible ... chocolate chip cookies enhanced by orange, butterscotch, and walnut.

1 1/4 c. all-purpose flour
1/2 t. baking soda
1/4 t. salt
1/2 c. unsalted butter, softened
1/2 c. light brown sugar, firmly packed
1/4 c. granulated white sugar
2 t. freshly grated orange zest
1 lg. egg
1/4 t. vanilla extract
1/4 t. orange extract
3 oz. semi-sweet chocolate, coarsely chopped or 2/3 c. semi-sweet chocolate chips
1/2 c. butterscotch chips
1/2 c. chopped walnuts

1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
2. In medium bowl, whisk together flour, baking soda, and salt. Set aside.
3. In large bowl, beat together butter, sugars and orange zest until light and fluffy. Beat in egg and extracts. On lowest speed of mixer, beat in dry ingredients until well combined. Then beat in chocolate, butterscotch chips and walnuts.
4. Scoop generously rounded tablespoonfuls of dough onto baking sheets leaving at least 3" between cookies. 
5. Bake for about 12 to 14 minutes or until cookies are just barely set and lightly brown on the bottom. Place baking sheets on wire racks and allow cookies to cool.

Lost In Shangri-La

My book club recently read Lost in Shangri-La by Mitchell Zuckoff and I thought that it was a fascinating book. Non-fiction, it is set in New Guinea at the end of WWII. A plane carrying 24 American army personnel, including 9 WAC's, crashed near the valley they called "Shangri-La" - a reference to the 1933 novel Lost Horizon by James Hilton and the eponymous 1937 Frank Capra film. The three survivors of the crash were thought to be the first outsiders to have contact with the aboriginals of that valley and what they experienced was quite amazing.

Tips for Growing Roses

* Select an appropriate variety for your area.
* Almost all roses require at least 6 hours of sun a day. For information on exceptions ...
* If you live in an area with extremely hot afternoon sun, late afternoon shade is desirable.
* Choose a location where your rose will not be overcrowded. Allow for air movement to keep moisture from accumulating on the leaves.
* Prepare the soil with organic matter and plant with the graft just below soil level.  For more details ...
* Fertilize after leave buds appear and about once every 4-6 weeks afterward. Stop fertilizing about 6 weeks before your expected first freeze.
* Water rose bushes at ground level.
* Spray buds and leaves daily with a dilute solution of dish soap if aphids or fungus appear.

National Rose Month
June is National Rose Month. What a great reason to plant some roses! With so many varieties of roses available, it might be difficult to choose. Some criteria for you to consider: size of the bush (miniature to giant), growth habit (spreading, climbing, bushy), flower form and size (single, double, round, pointed, small, large) color, fragrance, disease hardiness, tolerance to various weather conditions, and thorns. If it all seems a bit overwhelming, check out your local rose gardens or talk to a local rosarian or expert at a local plant nursery. Pictured above is Mr. Lincoln - one of many varieties reknown for their fragrance. Remember, take time to smell the roses!
