My two girls are now out of the house and I find myself telling them to "protect [their] heart." And though they know this has everything to do with love and friendship, they also know that I am all about health and safety. I want them to have fun and I tell them so, but always to think about health and safety first.  

 

February is American Heart Month and I thought it the perfect time to address aspects of health and safety. I hope your Valentine's Day is filled with love and happiness.

Well, GOOD NEWS, a study from Denmark suggests that "light joggers" (running approximately 5m/hr, and 2.5 miles a week) were 78% less likely to die over the 12 year study than those who were sedentary. And strenuous joggers (running more thatn 7m/hr, more than 4 times a week), were as likely to die in the same time frame as those who are sedentary. The thought? Healthy Brownie Bites
(Because we HAVE to have chocolate on Valentine's Day!!) 
  
-1/2 cup plus 2 TBL Bob's Red Mill gluten-free, all purpose baking flour
-1/2 cup sugar
-1/4 cup unsweetened cocoa powder
-1 and 1/4 teas baking powder
-1/8 teas baking soda
-1/2 teas salt
-1/4 teas xanthan gum (a natural gum binder)
-1/2 cup applesauce
1/4 cup canola oil
-1 TBL pure vanilla extract
-1/2 cup dairy-free mini chocolate chips
  
1. Preheat oven to 325. Spray 2 mini muffin pans with vegetable oil spray.
2. In a bowl, whisk the baking flour, sugar, cocoa powder, baking powder, baking soda, salt and xantham gum.
3. In another bowl, whisk the applesauce, oil and vanilla; stir into the dry ingredients.
4. Stir in chocolate chips.
5. Spoon the batter into muffin pans, filling them 3/4 full. Bake for 15 minutes or til set. Let the brownies cool in the pans for 15 minutes, then turn onto rack to cool completely.
