For those of you who have requested and encouraged us to open our office on the east side of Boca, we are THRILLED to say we will begin to do so in April!! We know that it is a "hop, skip and jump" for many of our patients and we are delighted to accommodate. Our address is 670 Glades Road, Suite 320, in front of FAU. GETTING POLITICAL

A recent article discussed how the "tan mom" (you know, the one whose daughter said she "went tanning with mom"), is scheduled to go on vacation now that her criminal case is over. From NJ, she stated that she hasn't "tanned in forever" and says she's ready for warmer weather. Asked where she was to go and her comment was "Somewhere hot so I can fry like a bacon and come back and say, "Ha! Ha! You can't arrest me for lying in the sun.'"  Initially, that causes a little giggle. But, let's just hope she has enough and adequate health insurance to cover all the skin cancer she will be addressing in her future. Or, will it fall on the rest of us to deal with?

GETTING POLITICAL, Part II
An 87 year old, in an independent living facility, collapsed, became unconscious and was barely breathing. A nurse called 911, but refused to do CPR, stating that it is against company policy to administer CPR. (To be fair, it is California law, staff members at independent living facilities (unlike nursing homes) are not  legally required to provide medical aid.) But when does moral or social responsibility take over? The 911 dispatcher begged, "Isn't there a gardner...any staff? Anybody that doesn't work for you, anywhere? Can we flag someone down in the street and get them to help this lady? As a human being...is there anybody that's willing to help this lady and not let her die?" Gotta wonder how that nurse is sleeping at night.

SMOOTHE SMOOTHIE
With the advent of Jamba Juice and other smoothie drinks, people are ditching their breakfasts or lunches for a healthy quick meal. But beware. You need to be smart about your smoothie.
Sweetened fruit juice, honey, agave, nuts and seeds, and frozen yogurt, though thought to be healthy, are high in sugar. Here are a few options to make your smoothie healthier.
(1)  Add protein without calories. Protein will keep you full. Try adding Greek yogurt (fat and sugar-free) rather than, say peanut butter. You'll get 3x the amount of protein than regular yogurt. Or opt for a scoop of protein powder that is low in carbs.
(2) Athough natural, agave, honey and simple syrups add calories. Instead, add fruits that are naturally sweet. You'll get the sweetness, plus the fiber and phytonutrients.
(3) Add cinnamon. In addition to flavor, it's a potent antioxidant, has antimicrobial properties and helps with brain function, controlling blood sugar and may lower cholesterol too.
(4) Thicken with avocado, not banana. By adding a quarter of an avocado, you will get the volume and richness along with 20 vitamins and minerals (folate, potassium, iron and vitamins E and C) plus monounsaturated fat for your heart.
(5) Add some greens.Adding spinach, lettuce or kale provides fiber, antioxidants, vitamins and minerals, making your drink a real powerhouse!!!

Salads for the Holiday
Tuscan Kale Caesar Salad

1/4 cup fresh lemon juice

8 anchovy fillets packed in oil, drained

1 garlic clove

1 teas Dijon mustard

3/4 cup extra-virgin olive oil

1/2 cup finely grated Parmesan, divided

Kosher salt and freshly ground black pepper

1 hard boiled egg, peeled

14 oz Tuscan kale or other kale, center stalks removed, thinly sliced crosswise (about 8 cups)

 

Directions:

1. Combine first 4 ingredients in a blender; puree until smooth. With machine running, slowly add oil, drop by drop, to make it a creamy dressing. Transfer to a bowl and stir in 1/4 cup Parmesan. Season to taste with salt and pepper. Cover and chill. Can be made 2 days ahead.

2. Separate egg yolk from white. Place egg white in a coarse-mesh strainer set over a bowl. Press egg white through strainer with the back of a spoon; scrape egg white from bottom of strainer. Repeat with yolk. Can do 6 hours ahead. Cover each bowl separately and chill.

3. Toss kale and dressing to coat. Season with salt and pepper and top with remaining 1/4 cup Parmesan and and sieved eggs.

Avocado and Watercress Salad

1/4 cup rice vinegar (not seasoned)

1 TBL grated sweet onion (Vidalia or Walla Walla) (use large holes of the grater)

1/4 cup finely grated peeled Gala apple (use small holes of the grater)

4 tsp soy sauce

1 tsp sugar

3 TBL vegetable oil

6 cups of watercress (thin stems and leaves only; from 1 large bunch)

1 firm-ripe avocado

 

Directions:

1. Stir together vinegar, onion, apple, soy sauce, and sugar until the sugar has dissolved

2. Just before serving toss watercress with enough dressing to coat. Quarter, pit, and peel the avocado, then cut crosswise into 1/4-inch-thick slices. Gently toss with watercress.
