| Our yummy $20 Farmer Pick box for this week. |
We ended up with a terrific week overall with the exception of the Spinach we expected from three producers: only Rise 'n Shine Farm ended up delivering theirs so we had to substitute Swiss Chard in some of the $20 Farmer Pick boxes. The upside is that Chard can be enjoyed raw for salad as well as lightly sauteed, really you can use these two greens interchangeably. Beech Creek Orchards is reporting we are almost through the end of the wonderful Pink Lady Apples, they grow many Apple varieties and the early Summer ones will be starting before we know it. Blueberry reports from our local farms are very good: there was very little flower bud loss when we had the freeze several weeks ago and the crop looks like it will be early and plentiful, yay! Strawberries are still just hitting their peak and we are so happy to have the new batch of our custom-made Roasted Strawberry Jam it's downright amazing.
Support Your Pickup Location! We are so happy to announce Wild Heaven Beer is now hosting our Decatur deliveries. Pickup your box, enjoy some local beer, life is good. Also the new Vinings location Canoe Restaurant starts with next week's deliveries! We have worked with the wonderful chefs at Canoe for many years and are happy they offered to host us for their neighborhood. Pickups are Wednesdays or Thursdays from 2pm - 5pm. Heads-up! Three or four times a year we have to take a hard look at Pickup Locations that are lagging for orders (we really need at least 10 orders per week to support the delivery costs for each site). We are coming up on the Spring Review and we have to say that East Cobb Cook's Warehouse nosedived after rallying the last time we scrutinized it and Arbor Montessori is not doing well, either. These are both long-term sites but if you don't order we'll stop coming! Tell your friends if you want to keep these locations, we'll make a decision in the next few weeks.
Order early! It makes such a big difference for us if we can get the majority of your Online Market orders in earlier. To sweeten the deal this week we are boosting the Early Bird Coupon to $2! Just place your order by Midnight Friday and enter the Coupon Code
earlybird when you checkout for TWO BUCKS off of your total. Two bucks is two bucks, ya know? If folks don't seem to be interested in this promotion we'll discontinue it so use it or lose it! : )

Weekly Recipe: Fancy Schmancy Potato Salad
 |
| | This version is accented with Pickled Okra and our own Pimento Peppers. |
Each week we highlight some of the ingredients from our boxes with one of our own Farmhouse Recipes. This is the way we cook here on the Farm with our limited kitchen time but love of Good Food. We hope to inspire you to try something new, even if it's just one All-Local Meal a week! The Full Recipe is in the Wednesday Weekly Newsletter.
|
Our Fancy Schmancy Potato Salad is chock full of veggies and makes a great lunch dish on it's own. Serve on a bed of Lettuce and you have got a lovely meal or side for supper. We hope you enjoy it!
1. Wash, trim and chop 2 pounds of Potatoes, Sweet Potatoes, Rutabagas, etc., whatever a nice mix you like. Our Mixed Roots are fine for this but in the spirit of the dish we like to put about 2/3 Potatoes or Sweet Potatoes in there. There is no need to peel organically grown root veggies: the peel is where a lot of good fiber and nutrients are but it's also where a lot of the chemicals are stored in the conventionally grown roots. If you don't use organic for this be sure to peel!
2. Trim and chop 1/2 cup Red Onion. (You can use Green Onions too, the color is what you are looking for here).
3. Prepare the dressing: mix together 1/2 cup Plain Greek Yogurt (Atlanta Fresh of course); 1/2cup Mayonnaise (we like Sauer's brand); salt and pepper to taste, chopped fresh or dried mixed herbs of your choice; 2 Tablespoons Apple Cider Vinegar (or other vinegar); 2-4 Tablespoons pickled vegetable (you can use plain old pickle relish but try chopped Pickled Radishes, Okra, Roasted Peppers or another pickled veg!). Chill the dressing for 30 minutes so the flavors come together.
To prepare: steam or boil the Potatoes until just tender (steaming is nice because if retains more of the vitamins and they don't get watery). You can use the Onion raw or we like to saute it lightly in a little Olive Oil, allow veggies to cool. Dress the vegetables and chill for at least a hour before serving.
