Weekly Recipe:
Pasta Primavera
We'll share our tricks for this delicious homemade dish.
Each week we highlight
some of the ingredients from our boxes with  one of our own Farmhouse Recipes. This is the way we cook here on the Farm with our limited kitchen time but love of Good Food. We hope to inspire you to try something new, even if it's just one All-Local Meal a week! The Full Recipe is in the Wednesday Weekly Newsletter.

We love making homemade Pasta here at the Farm though usually don't have time to make it as often as we would like. Try our recipe or use store-bought for the base of this light and fresh Spring entree. Happy Spring!

Prepare Pasta: A couple of points about our method: there are lots of opinions about what type of flour to use, we have good luck with plain All-Purpose Unbleached Flour and have used Bread Flour, too. Also we like to use a large bowl to mix the Pasta dough together instead of a cutting board or flat surface, makes cleanup a bit easier. Making homemade Pasta is fun, especially for kids!
     1. Place 3 cups All-Purpose Unbleached Flour in a large bowl, make a well in the middle of the flour. Crack three Eggs individually to be sure there are no shell bits in there, pour into middle of flour well.
     2. Mix together gradually with a fork or your hands, turning the bowl as you go until you have a stiff dough. The texture takes some practice but it should seem a bit elastic, if it's very dry add a couple of Tablespoons water or Olive Oil.
     3. Knead the dough for 5 minutes. Don't skip this part: this is what helps bind the gluten in the flour with the proteins in the eggs. Wrap the dough in a towel or place in a zip bag to rest for 1 hour.
     4. Cut the dough ball into four chunks, roll out with a rolling pin or use a pasta maker to form sheets, handcut or use the machine to make your noodles.

Make your Pasta noodles just before you get ready to prepare the dish: drop into boiling salted water and cook for 8-10 minutes or until taste-test indicates desired done-ness. Alternatively, prepare store-bought Spaghetti or Linguine according to package directions.

Wash, trim and chop 1/2 pound Spinach into big chunks. Wash, trim and chop 2-3 Carrots into matchsticks or use a vegetable peeler to shave them into ribbons. Trim and slice 1/2 Red Onion into slivers. If you are a Garlic lover you can add chopped fresh Garlic to your taste.

Saute Onion and Carrots with 2 Tablespoons Olive Oil, salt and pepper until just tender. Toss with hot cooked Pasta and the Spinach, drizzle in a bit more Olive Oil until it is the dish is mixed together well. Top with grated cheese of your choice and serve (we like the Wright Dairy Fontina for this!).
