    Our Orders This Week

Our $20 Farmer Pick box this week
The first week of February already! We are SO glad that Mother Nature has backed off a bit on on the low temperature predictions for the next few weeks (we had been expecting some frigid nights but now, not so much!). Our world is full of educated guesses, crossed fingers and often many prayers. For instance: last week the Goats got out of their designated acreage and munched down ALL of the Brussels Sprouts plants here at Moore Farms, right down to the nubs. At least Beech Creek still has their Fall crop coming in because our Spring ones are over and out. We sowed Carrot seeds instead and had to grumble and groan for a couple of days but ultimately it's all part of it. Our Mama Goats have been keeping us busy, too. One tangled herself in fencing so we had to send out a search party to find her and the last Mama to have her kids has been giving us trouble, not paying attention to one of her girls. Two of the triplets have had colds due to all that rain from a couple of weeks ago so they have been getting some extra attention. Fortunately everyone is doing great but it sure is easier when everyone behaves! : )

    Pickup Location Changes?
So here is a heads-up, folks! These Pickup Locations have not had enough orders for some time to keep them going. We need at least 10 orders per week just to cover the costs of delivery. If you want us to keep coming we need to hear from you! Email us to let us know, spread the word to friends and family and order to show us you want to keep your site. We had a great surge at the Buckhead - Sam Flax site this week so it is not on the list!

    Weekly Recipe:
    Cheesy Mac & Greens
Our Chicken Dinner Package this week.
    Each week we highlight
    some of the
ingredients from our boxes with  one of our own Farmhouse Recipes. This is the way we cook here on the Farm with our limited kitchen time but love of Good Food. We hope to inspire you to try something new, even if it's just one All-Local Meal a week! The Full Recipe is in the Weekly Newsletter on Wednesday.

So our Cheesy Mac & Greens dish came about when we were trying to help get some green goodness into picky eaters. It is sure to please and we have the main ingredients included in our Chicken Dinner Package this week: a "kids" package with Chicken Drumsticks and Apples for dessert. We know all kids big and small will enjoy it!

    Cheesy Mac & Greens
Choose a fun pasta shape for this and make it different each time: we used Shells when we made it for supper here at the Farm the other night.
    1. Prepare 1-pound package of Macaroni or other Pasta of your choice. Toss with Olive Oil to coat and prevent sticking. When cooled, mix in 1/4 cup grated Cheese (we sent Wright Dairy Gouda) until Pasta is coated, set aside.
    2. Wash, trim and chop Kale, Collards, Spinach or other Greens, saute in 2T Olive Oil until just tender (you can add chopped Onions or Garlic if you like). To hide them in the dish more you can also pulse cooked Greens in a food processor or blender.
    3. Make a roux with 2T Butter, 2T Flour, salt and pepper. Add 2 cups milk and stir while cooking over medium heat to combine and thicken the cream sauce. Mix 2 Tablespoons Corn Starch with 1/2 cup milk and add this to the cream sauce (the corn starch helps the cheese sauce from getting goopy). Stir and cook over medium heat for 3-4 minutes. Turn off heat and stir in another 1/4 cup grated Cheese.
    4. Combine the Cheese Sauce, Pasta and Greens. Serve out of the pan or you can top with buttered Bread Crumbs and bake at 325 degrees for 15-20 minutes.

    Yummy Chicken Drumsticks
The Legs are easy for kids to eat but can be chewy and stringy. Try our tips for tender tasty Drumsticks.
    1. Thaw and season with salt and pepper, other spices to your taste (we used dried Italian blend). Refrigerate for at least an hour or overnight.
    2. Place the seasoned Chicken Legs in a baking dish and add 1 cup Chicken Broth or Water. Cover and bake at 300 degrees for 1 hour. Crisp up the skins by browning in a frying pan with a bit of Olive Oil or broil on a baking sheet. Save the cooking juices for soup or gravy.
    3. Another great tip: used pre-cooked Chicken Legs for easy Fried Chicken. Dip cooked Chicken in Egg wash then roll in seasoned flour. Fry Legs in a skillet with 1/2 inch deep oil, turning until golden brown on all sides. Since you don't have to cook the meat you are just browning the crust and the Chicken will be very tender.

    Sauteed Spiced Apples
Wash, trim, peel and cut one Apple per person into bite-sized chunks or slices. Saute on the stovetop with 1 Tablespoon Butter, a sprinkle of Sugar and dash of Cinnamon. Cover and cook over medium low heat for 5-10 minutes until just tender.
