| Our lovely Fall-to-Winter transition $20 Farmer Pick this week (missing is the Florida Tangerines, they missed the photo shoot!). |
Alright, already! We know everyone was helping with the hoping, praying and rain dancing but getting caught up on four months of drought in two weeks was a little much! We are glad all around, at least the rain stopped a couple of days before the first serious cold blast coming in this week, Mother Nature has surely been having fun rolling her weather dice this year. As of Wednesday afternoon we are STILL on Baby Goat watch with two girls showing signs of kidding any minute, they have been keeping us waiting this year. Pictures will appear on our Facebook page first so check it out and Like us so you get to see them first!

Each week we highlight some of the ingredients from our boxes with one of our own Farmhouse Recipes. This is the way we cook here on the Farm with our limited kitchen time but love of Good Food. We hope to inspire you to try something new, even if it's just one All-Local Meal a week!
Always a hit when we serve this favorite for our Farmhouse Supper Club, the color and texture will vary depending on the mix of Roots we have! Featured in our Soup & Salad Box this week, our Roasted Roots Soup is a satisfying and delicious way to enjoy a variety of vegetables that some folks at your dinner table might otherwise turn their noses up at. : )
1. Wash, trim and chop two pounds of Mixed Roots into 2" chunks (Potatoes, Sweet Potatoes, Turnips, Radishes, Rutabagas, etc.,). No need to peel organically grown roots! Add some chopped trimmed Green Onions, too. Toss with just enough Olive Oil to coat, season with salt and pepper. Place in a single layer on a lined baking sheet and roast in a 400 degree oven for 30-40 minutes or until tender and just starting to brown on the edges. Give them a stir halfway through cooking time. 2. Place Roasted Roots in a soup pot and give them a good mashing with a potato masher. Add 4 cups liquid (Vegetable Stock, Chicken Stock, Milk, Cream Water or a combo) and simmer for 10 minutes. 3. Check again for seasoning and add salt, pepper or other spices to your taste. To finish, puree with an immersion blender (we LOVE ours, ask for one for a holiday present of you don't have one!) or transfer to a food processor or blender to puree until smooth. Serve with Salad and Cornbread or freshly baked Bread and Butter.
