| Our $20 Farmer Pick box full of deliciousness this week! |
So nice to feel the change in seasons again, the cool mornings have been really refreshing. All went just exactly as planned this week for our farmer harvests (yay!) so no substitutions or either/or items to report. We are waiting for Mama Hens to hatch chicks anytime now so hopefully we'll have Baby Chick pics in the "Online Market is Open" email on Thursday! Website update: we are closing in on our planned launch date of Thursday September 22nd for the new website! It looks like we will be ready for the first day of Autumn to celebrate a beautiful new look and feel with updated functions for our Online Market. It's hard to believe that the current site is almost NINE years old (that's a thousand in cyber years). One note about the Member database: any accounts that were never activated with a Membership or if your account has not had an order placed in over a year your info will not upload. We will email the quarterly Investment Account balances next week as they will transfer to the new site, too. SO excited, ya'll are going to love i!

Weekly Recipe:
Spaghetti Squash with Sweet Pepper Sauce

Super simple and super tasty!

Something deliciously different for a great side dish or vegetarian meal. This one came up out of necessity here on the Farm: time was of the essence so Laurie whipped up a dish of Goodness that turned out to be a new FAVE! We gobbled it up so fast we had to make more the next day. Ingredients: (1) Spaghetti Squash, (2-3) Sweet Peppers, (2 cups) Vegetable Stock, Garlic and Asiago Cheese. One Squash will serve two for a meal or four for a side dish. 1. Preheat oven to 350 degrees. Slice open Spaghetti Squash, scoop out the seeds and place the two halves cut-side down on a lined baking sheet (we use a silpat). Bake for 30-40 minutes. 2. While the Squash is baking make the sauce: saute 1 cup chopped Sweet Peppers with Garlic to taste in 2T Olive Oil until tender. Season with salt and pepper to taste. Add 2 cups Vegetable Stock and simmer for 5 minutes. Puree with immersion blender or in a food processor or blender until smooth. Add 1/4 cup finely diced Sweet Pepper and simmer for 10-15 minutes, sauce will reduce a bit. 3. Grate or crumble Asiago Cheese, the Wright Dairy version is really flavorful so you don't need a lot. 4. When Squash is done use a fork to scrape the "Spaghetti" out of the shell. Sprinkle some of the Asiago on top then spoon the Sweet Pepper Sauce over all. Top with some more Asiago and serve. Best to have a dish you can lick for this one! ; )
