| Our $20 Farmer Pick bx this week full of delicious Summer selections. |
We had some Farmyard drama this week when we confirmed what had caused the recent disappearance of a few of our Chickens and Ducks. The chicken-napping has been due to a dastardly Fox sneaking in and making off with our poultry. The daring daytime raids were carried out almost in front of our eyes! An emergency fencing job reconfigured the areas our poultry could range on so that they would be safe until we can catch or otherwise remove the predator from our environment. So frustrating, but it's all a part of our world and thankfully not something we are challenged with very often.
| Our Chickens, Ducks and Goats all freely range in a large area. The poultry now have a new smaller zone until the Fox fuss is fixed. |
OK our weekly orders went pretty well despite the Farmyard excitement: we just had one item we ended up short from Stateline Farm when recent rains hurt their Cherry Tomato harvest. Our $40 Farmer Picks got either the planned Cherry Tomatoes or Cucumbers or another pint of Blueberries.

Weekly Recipe: Baked Stuffed Squash
| | Add Sausage or Ground Beef if you a non-vegetarian dish. | |
Squash is Laurie's favorite vegetable and this is a great recipe for a vegetarian meal or a cute side dish. The round Squash and Zucchini we grow are a fun type to use but any shape will work! It's also an easy one for kids to help with in the kitchen. We know from our own experience that kids are much more likely to eat their veggies if they are involved with growing or cooking them. We hope you try this recipe because we know you will love it! Ingredients: Rice or Grain; whole Round or Patty Pan Squash; Vidalia Onion; Sweet Pepper; Garlic; fresh Tomato; grated Cheese (we used Red Hill Cheddar). 1. Wash and trim the base of Round or Patty Pan Squash, we prepare one per person but you could slice them in half to serve two people instead. Cut the top off of the Squash and scoop out the seeds, set them aside. Place the hollowed out Squashes in a baking dish and add 1" of water to the dish. cover with foil or lid, bake at 350 degrees for 20 minutes. Prepare filling. 2. Prepare Rice or other grain of your choice, we like to use Basmati Rice, Brown Rice or Couscous or Quinoa, all are great. 3. Chop the remaining Squash parts and the seeds you scooped out. Chop 1/2 Vidalia Onion, 1 Sweet Pepper, Garlic if you like and 1 fresh Tomato. Saute the Onion, Pepper, Garlic and Squash with 2T Olive Oil or Butter in a skillet until just tender. Add chopped fresh Tomato, season with salt and pepper. If you like you can add 1/2 pound browned Ground Beef or Sausage. Remove from heat. 4. Mix together the prepared Rice or Grain, sauteed Vegetables and grated Cheese. Fill pre-cooked Squash, cover and bake for another 30-40 minutes (add more water to the baking dish if necessary). Top with more grated cheese or slices of Squash, bake uncovered for another 10 minutes or until just browned. Serve as a side dish or light main course and it makes a great lunch dish!
