Our Orders This Week!
The Peas this week are the type that you shell before eating!
We had a bounty of Spring Onions this week so we ended up putting a bonus bunch in everyone's Farmer Pick boxes! Otherwise we are happy to report there were no harvest problems so no replacements or anything, yay! This weather has been just about perfect so far this year, though we are ready for a little more rain right about now. The lovely Beets in the boxes are a "two-fer" vegetable in that the fresh tops can be washed, chopped and prepared like Chard or Kale. A simple way to fix the Beet roots is to wash, slice and simmer for 15-20 minutes in a little salted water. Add a dash of oil and vinegar and enjoy cold as a salad! We hope you all have fun with the English Peas, shell them before steaming or sauteing and add the outer shells to your compost bucket.

Our newest additions to the Moore Farms Critter Crew! 
So some of the big news for us here at Moore Farms is that our longtime Farmsitters are taking the plunge and moving to Moore Farms full-time! Danny, Sandy and Will Perry have been furiously working on making the transition from Metro Atlanta to Rural Alabama. In preparation for their arrival we have worked to make one boy's dream come true: the big item on Will Perry's Wish List was to finally have space for Peacocks, birds he is enamored with. We found a good farm near Birmingham who have hand-raised their Peacocks and Peahens for 15 years so we had a match! These two 10-month-old Peacocks will start to grow their stunning adult plumage in another year or so and they sure are a beautiful additional to the Critter Crew!

As promised here is a photo of our Mama Duck Hen sitting on her new nest. She has nine eggs she is incubating (we checked when she got up to take a bath yesterday!) and they will hatch in about 25 days. Her nest is made in the corner of the chicken house with straw bedding and lots of the down feathers she pulls from her own belly. We don't know how many are viable but hopefully we'll have a bunch of little ducklings running around in June! Her one Duckling for her first hatch is growing fast and the Baby Chick she hatched with it has done fantastically well with its Foster Mama Chicken! Our third batch of chicken eggs is in the incubator, they are due to hatch in another two weeks so it's a lot of baby making going on around here right now.

Weekly Recipe: Ravishing Radishes

Every Spring we have a lot of new folks who don't know what to do with fresh Radishes except slice them up for salads or crunch on them raw with dip. We'll share our Top 10 ways to enjoy them including some we bet you have never thought of!
1. Raw with Butter and Salt - Yes the classic is still a favorite. we made open-face Radish Sammies for our Les Dames d'Escoffier group last week with Star Provisions Baguette, Wright Dairy Butter, sliced Easter Egg Radishes and a sprinkle of Herb Salt.
2. Sauteed with Spring Peas - Shell some English Peas, slice some radishes and saute with Butter just until crunchy-tender. Makes a great side dish.
3. Pasta Primavera - Chop and add to other Spring Veggies for a nice light lunch or supper. Our easy Pasta: prepare pasta of your choice, add prepared chopped veggies at the last 1-2 minutes of pasta cooking, drain all and toss with a little Olive Oil, salt/pepper and a grating of Asiago Cheese.
4. Radish Top Soup - This one is a favorite of our friend Sasha Johns, her kids love it! Click here for the recipe from a previous Newsletter.
5. Quick Pickled Radishes - makes a great addition to a cheese tray. Wash, trim and slice Radishes in half. In a saucepan heat Apple Cider Vinegar, salt, sugar, peppercorns until sugar is dissolved. Add Radishes, remove from heat and allow to cool. Refrigerate overnight before enjoying, they will keep in the fridge for 1-2 weeks at least.
6. Add to Roasted Roots - Yes, they make a great addition to Potatoes, Turnips, etc., for our classic. Wash, trim, chop, toss with olive oil salt/pepper and roast in a hot oven on a baking sheet until tender and crispy.
7. Add to Chicken, Egg or Tuna Salad - Chop Radishes into a fine dice. They make a great crunchy add to these favorites. Oh, Salmon Salad, too!
8. Use for Stir-Fries - Any type of Radish is great used this way, not just Daikon!
9. Spring Soup - Wash, trim and chop Radishes, Salad Turnips, Green Onions and Sugar Snap Peas (or use shelled English Peas). Saute with a little butter until tender, add broth and cream, season with salt/pepper. Serve chunky or puree with an immersion blender. This is great hot or chilled!
10. Any Way You Would A Carrot - Yep, that's our rule of thumb! If you have a recipe that calls for Carrots and don't have any handy try substituting with Radishes. You might find all kinds of new ways to enjoy them!

Our monthly Supper Club meals are four-course menus we prepare right here on the farm with the ingredients we have from our group of farmers that week. We always have a Soup, a Salad, a Main Course (both Vegetarian and Meat options) and Dessert. The Kids Menu is smaller portions of the four courses and we can accommodate food allergies and preferences for most anyone. One of the best things about our Online Market is that you only order when you want to get another box of our farmers' Good Food! In a nutshell these are the basics on placing an order:

1. Farmer Pick Box - Choose from our $20, $30 or $40 box and we'll pack it up for you. Our Soup & Salad Box, Dinner Packages and Meat Packages also count as a "Farmer Pick" order type.
2. Farmer Pick with Add-Ons - You can add as many extra items to a Farmer Pick Box as you like from our Online Market, we're already packing the box for you!
3. Custom Choice Order - Fully customize your order for a $5 Custom Choice Fee. (Custom Choice orders get priority if we are short on an item and are individually packed so they get VIP treatment!)
