digital incubator (on Easter Sunday!). The 16 newchicks are already moved out to the Farmyard in their own cozy Chick Suite. So far only one little Duckling for Mama Duck but she still has two more eggs she is sitting on so maybe she will have a couple more. We are happy to have more rain coming on Thursday, it is right on time for the Broccoli, English Peas, Lettuce and Chicory here at our place. Nothing too crazy to report this week from the farmer harvests, we did have some folks who will enjoy Kale or Collards instead of Swiss Chard as we were a little short, hopefully everyone is happy with that substitution!

One of our few "neighbor" farms, Frolona Farm is nestled in the beautiful rolling hills between Franklin GA and the Alabama State line. Their wonderful pasture-raised Beef and Pork come from happy animals that are allowed to range over a couple hundred acres. We know firsthand that when livestock are raised in a natural environment on fresh grazing grass, clean water sources and are allowed peaceful lives they produce superior tasting quality meats. Favorite Salad Dressings

We're into Salad Season so we are sharing three of our favorite simple Salad Dressing recipes including the Yogurt Dressing for our Spinach Strawberry Salad in the Dinner Packages this week. Dressing Tip: we use a pint canning jar to mix our Dressings in. You just put the different ingredients in there, seal the lid and shake away. This is a great size to use for 1-2 weeks and goes right in the fridge until your next salad. Farmhouse Vinaigrette - our go-to dressing, most often used for our Supper Club Salads. Mix together in a pint jar: 1/2 cup good Olive Oil, 1/4 cup Herb Vinegar (or other vinegar of your choice), 1 Tablespoon grainy Mustard, 1 Tablespoon Honey, pinch of salt and pinch of pepper. We love our Purple Basil or Thai Basil Vinegars for this dressing. Fruit Dressing - this is good with almost any fruit such as Strawberries, Blueberries, even Cherry Tomatoes, whatever fruit is in season. Place 1/4 cup fresh fruit in a blender, add 1/2 cup good Olive Oil and puree until very smooth. Mix in a pint jar with 1/4 cup Apple Cider Vinegar, 1 Tablespoon Honey, salt and pepper. Yogurt Dressing - we love the wonderful Yogurt dressings Atlanta Fresh makes and here is one we came up with. . .kind of like Green Goddess. Blend together until smooth: 1/4 cup good Olive Oil, 1/2 cup Yogurt, 1/4 cup Mayonnaise, 2-3 Tablespoons chopped fresh Herbs (parsley, chives, tarragon, etc.), 2 Tablespoons Lemon Juice, 1 Tablespoon Asian Fish Sauce, salt and pepper. Keep in that handy pint jar for up to 2 weeks if it lasts that long! Farmhouse Supper Club

Our monthly Supper Club meals are four-course menus we prepare right here on the farm with the ingredients we have from our group of farmers that week. We always have a Soup, a Salad, a Main Course (both Vegetarian and Meat options) and Dessert. The Kids Menu is smaller portions of the four courses and we can accommodate food allergies and preferences for most anyone.
