| Our $20 Farmer Pick box this week full of goodness (we actually missed putting the Kohlrabi in the picture!). |
So it's the last week of our Online Market deliveries for 2015 as another wonderful year whizzed right on by! Everything went pretty great with farm harvests and deliveries so no replacements going on. A note about the terrific White Sweet Potatoes: one reason why you won't find these in grocery stores is that the sugar content is quite high and they do not store for a long time. We recommend keeping them in the refrigerator (as well as the rest of the items in this week's boxes!) and enjoying them sooner rather than later. Use them any way you would "regular" Sweet Potatoes.
We hope all of our Members enjoy a wonderful and delicious holiday season with friends and family. We'll be back online in the New Year with more Good Food from our group of local farmers, cheers everyone!
Weekly Recipes: Kohlrabi Three Ways
| Kohlrabi can be Green or Purple just like Cabbage. |
This funny-looking Cabbage Cousin is just delicious and may be new for some folks so we're going to highlight it this week! Wonderful raw or cooked we think you will love this funny-looking vegetable as much as we do. Try putting 1/2" "sticks" of peeled Kohlrabi on your next raw vegetable tray with your favorite dip. It's one of the easiest ways to share it and it's fun for folks to guess what it is!
Kohlrabi Slaw Grate 2 peeled Kohlrabi with 2-3 Carrots and 4-5 Radishes. For 4 cups of shredded vegetables dress with 1/4 cup Plain Greek Yogurt (Atlanta Fresh is best), fresh or dried herbs to your taste, salt and pepper and a drizzle of Honey. Refrigerate for 30 minutes before serving.
Kohlrabi Gratin Another tasty way to sneak in some extra veg! Wash, trim and slice very thinly 1-2 Kohlrabi, 3-4 Potatoes, 1 Sweet Potato and 1/2 of an Onion. Use a mandolin if you have one for the thinnest slices. Layer vegetables alternately in a buttered baking dish and dot with 2T Butter, season with salt and pepper. Pour 1.5 cups of Heavy Cream over all (or use 1/2 Cream and 1/2 Milk). Cover and bake at 350 degrees for 30 minutes. Sprinkle 1/4 - 1/2 cup grated Cheese (we like Wright Dairy Red Hill Cheddar) on top and bake uncovered for another 10-15 minutes. Allow to rest before serving.
Kohlrabi Schnitzel We first had this at Chef David Sweeney's place Dynamic Dish and it's a keeper. Serve as you would a Chicken or Pork Schnitzel with Pasta, Potatoes or Rice and a nice salad. Wash, peel and slice Kohlrabi into 1/2" rounds. We make 2-3 per person. Steam or simmer slices for 10 minutes or until just a little tender, allow to cool. Dip Kohlrabi in seasoned egg wash (1 beaten Egg, salt, pepper) then coat in bread crumbs or panko. Pan fry over medium heat with vegetable oil to brown on both sides, keep warm in the oven until ready to serve.
