As we race toward the end of 2015 we were thrilled to get the first delivery of Certified USDA Organic Florida Citrus, straight from the groves. The fruits from the Southernmost part of our local food region are so nourishing and refreshing during the Winter, they really add a lot to our diet. Our Farmer Pick boxes were definitely very GREEN as we have an abundance of salad and cooking Greens right now. The lovely Mizuna and Arugula are terrific chopped fresh for salad and of course Kale can be enjoyed raw or cooked. Looking for another way to enjoy the Arugula? We like it chopped and very delicately sauteed with Olive Oil and Garlic then tossed with pasta and Parmesan for lunch or dinner. Delicious!

White Sweet Potato Kale Soup
The White Sweet Potatoes from Rise 'n Shine Farm are really special and not easy to find. Their delicate flavor and texture make a wonderful and satisfying creamy soup that does not need to be made with heavy cream! Also featured in our Soup & Salad Box Soup & Salad Box it is sure to please everyone at your table.
1. Wash, trim and peel four pounds of White Sweet Potatoes. Chop into 2" chunks, toss with just enough Olive Oil to coat. If you have whole Cardamom Seeds add 3-4 to the potatoes and remove after roasting. If not, use ground Cardamom and sprinkle 1/2 teaspoon over potatoes. Roast in a hot (400 degree) oven for 15-20 minutes or until potatoes are just tender and starting to brown a bit. Allow to cool
2. Wash, trim and chop ½ - ¾ pound Kale. Sauté until tender with 2T Olive Oil, season with salt and pepper.
3. Add Kale to the Sweet Potatoes in a large soup pot. Add 2 cups water or broth and puree using an immersion blender (or food processor) until smooth. Add 1 can Coconut Milk and additional water and/or broth if soup is too thick. Season with salt and pepper.
