Alrighty we hope everyone had a warm, delicious and loving holiday! We were traveling and had a wonderful vacation getaway with friends to Italy (pictures are posted on our Facebook page!). Lots of chaos while we were gone: one of our Baby Goats had some serious health problems so our wonderful Farmsitters Sandy and Danny Perry (and Laurie's Mom Linda) had to take him to the vet and nurse him; one of our farmers lost his help at the last minute so we didn't have as much Spinach as we expected (some Farmer Pick boxes got Arugula or Mizuna instead); and when we got home we found out one of our credit cards was fraudulently used and had to deal with all of that, argh!! But as you might expect Italy was wonderful and ultimately worth the consequences of getting away! We visitied Genoa, Parma and Venice and enjoyed living like city folks for two weeks. Ahhhhhhh. Now back to work!
Weekly Recipe: Asian Veggie Soup
Just what the doctor ordered: this soup is a fresh, healthy and refreshing change-up after traditional holiday feasting. Also featured in our Soup & Salad Box it will also warm you to your cockles! ;)

Wash, trim and chop Pac Choi, Mixed Roots, Kale and Cilantro. Set Cilantro aside for soup garnish. In a large soup pot heat 2Tablespoons Vegetable or Peanut Oil. Add chopped Veggies, stir and cook for 2-3 minutes over medium heat. Season with 2Tablespoons Soy Sauce, 1 teaspoon Ground Ginger (or ½ teaspoon fresh grated Ginger), 1 teaspoon Ground Garlic (or ½ teaspoon fresh grated Garlic). This is just a guide, you can increase these seasonings to your taste! Add 4-6 cups Chicken or Vegetable Broth depending on the level of broth-iness you like. Bring Soup to a simmer, cook for 10-15 minutes. Check for seasonings and adjust. Serve with chopped Cilantro as garnish.
