So we had some replacements going on this week as the Tomatoes are winding down and we just didn't have as many as we thought there would be. Farmer Pick boxes got either the planned one-pound order of Slicing Tomatoes OR 1/2 pound Tomato plus (2) ears of Sweet Corn OR an Eggplant. We did our best t please everyone so we hope everyone is happy with your box! The Sweet Corn has been terrific and it is definitely the very last for the year so we were glad to spread a little more around. It has been a BUSY week as we are prepping the farm for Fall/Winter crops, Mama Goats have been birthing kids (we are up to 5 girls and three boys!) with one more Mama to go (Niblet is keeping us waiting). Will's Grilled Meatloaf with Sides
One of our favorites, grilling Meatloaf gives terrific flavor. We hope you enjoy Will's recipe with sides of Roasted Potatoes and Tomato Cucumber Salad.
Will's Grilled Meatloaf
In a bowl gently mix 2 pounds of Ground Beef with 1/4 cup finely chopped Sweet Pepper, 2T Olive Oil, 2T water, 1 cup fresh bread crumbs, 2 Eggs lightly beaten, 1T Garlic Powder, salt and pepper (add other herbs/seasonings to your taste). You don't want to mix the meat too much, keep a light touch for grass-fed meats. The Olive Oil and water help to keep the meat moist, too.
Form mixture into a 2" thick loaf. Place in the refrigerator and chill for 30 minutes. Grill over medium heat for 15-20 minutes, check temperature with a thermometer (take off of heat when temp reaches 140 degrees). Allow to rest before slicing and serving.
Optional glaze: combine 1/4 cup ketchup, 1/4 cup brown sugar and 1/4 cup apple cider vinegar. Sauce Meatloaf and bake another 10 minutes. Or use our wonderful Hot Damn! Jelly Company Citrus Glaze.
Roasted Potatoes
Wash, trim and chop three pounds of Potatoes into bite-sized chunks. Toss in a bowl with just enough Olive Oil to coat, season with salt and pepper. Wrap in individual foil packets and grill or roast in a 400 degree oven for 15-20 minutes. Check for doneness, Potatoes should be tender and a little browned, cook for an additional 10-20 minutes if necessary.
Tomato Cucumber Salad
Will prepares this salad pretty much for every meal in season, it is so tasty! Wash, trim and chop 1 large or two small ripe Tomatoes and 1-2 Cucumbers. Trim and chop 1-2 Sweet Peppers and Basil. If you like add a chopped Onion, too. Toss vegetables with 2T Olive Oil, 1T Vinegar, salt and pepper. Chill before serving for best flavor.
