So another terrific week of weather as we keep getting rains right on time here at Moore Farms. Not all of our farms have been so lucky but many of us have this year. It's unbelievable that we are almost halfway through August already and low nighttime temperatures in the 60's are also a little

weird for this month. Weird but wonderful, we're enjoying the break from the heat! It was a big weekend on the farm as we hosted our annual Moore Family Reunion and just happened to have our chicks hatching at the same time. Kept us busy, that's for sure. Wednesday morning we had the pleasure of a visit from our neighbor's little boy and he was thrilled to see the new baby chicks! TOO cute. We hatch our own chicks for our Poultry Meat production, laying Hens and for our City Chicks program. We have set the September and October Farmhouse Supper Club dates, see the link below right for details and reservations. We have enjoyed folks coming out to the farm for these Suppers and always have such a nice mix of people. Kids young and old enjoy feeding the chickens and goats and of course sharing a delicious meal together.

Perfect Pork Chops & Thai Garlic Green Beans

Our pork harvest is in and we are happy to share our method for preparing delicious Pork Chops. (Featured in our Dinner Package this week they are paired with Potatoes, Cabbage and Citrus Sauce for a yummy meal!) We also have one of our favorite ways to enjoy Green Beans, with Garlic and Thai Basil.
To prepare Pork Chops:
Thaw and season chops with salt and pepper. Heat 2T Olive Oil in an oven-proof skillet (Will loves his iron skillets for meats!). Sear both sides of chops and edges so the fat gets browned a little, too. The fat in pasture-raised meats is not the same as grain-fed! We encourage you to enjoy the flavorful fat. Spoon Hot Damn! Jelly Company's Citrus Syrup over chops for glaze. Place skillet in 350 degree oven to finish cooking, about 15-20 minutes. Internal temperature should be 120 degrees, take chops out and allow to rest before serving.
To prepare Thai Garlic Green Beans: Wash, trim and chop 1 pound of Green Beans as you like (Laurie chops them smaller while Will sometimes cooks them whole!) Wash, dry and chop Thai Basil, we like a lot of it so 1/4 cup is a good amount. Peel and chop, grate or mash 2-3 cloves of Garlic to your taste. Heat a wok or skillet over medium high heat with 2T cooking oil such as Peanut, Canola or Vegetable Oil. The locally produced GMO-free Solio Oil is great for this. Add Beans and stir-fry for 2-3 minutes. Add Garlic, 2T Soy Sauce, 2T Rice Wine Vinegar, Thai Basil and Red Pepper Flakes, stir-fry for another 1-2 minutes. Serve immediately.
