Well we are right back into our Steamy Southern Summer again, woo-hoo! Fortunately for all of us our farmers have pretty much all reported getting some or all of the scattered rains and storms in the last few weeks so our fields are still looking really good. Thankfully we did not have any problems to report from this week's harvests or the orders. We hope you all enjoy our wonderful farm fresh food and stay cool!
Update on our Eggs

All of our Egg producers follow the new Non-GMO feed regimen.

So Moore Farms and our seven other Egg producers are seeing a steady upward trend in our hen's Egg production as they adjust to the Summer weather (that first long heat wave really made them unhappy!). We have kept our production estimates low to be on the safe side for a few weeks but hopefully we can lift the one-dozen-per-order limit soon. ALSO we have finally been able to get all of our producers switched over to a locally-produced Non-GMO Soy-Free feed regimen! All of our hens are allowed to range naturally every day so they can scratch in the dirt for bugs and eat grass and weeds. The increased feed cost translates to a a higher price for our wonderful Eggs but we feel it is worth it to ensure the quality of our girls' delicious product.
Weekly Recipe: Summer Succotash
Our take on this classic is great as a side or a whole meal. Will made it for supper with thinly sliced Venison Loin, yum! There are many variations of Succotash out there and it is historically attributed to similar Native American dishes.

Delicious warm or served at room temperature, Succotash is a satisfying Summer dish!

Some include Okra, Peppers or other vegetables, too. Ours is simple and will make 4 side dish portions. Ingredients: 2 ears Sweet Corn 2-3 Summer Squash 1-2 Onions 1 medium Tomato 1/2 pound Green Beans or Shelled Fresh Beans Method: Wash and trim all vegetables. Carefully cut kernels off of Sweet Corn cobs with a sharp knife. Chop the other veggies to your taste, we like to feature the Squash when we make this, chopping the other veggies much smaller. In a large skillet heat 4 Tablespoons Olive Oil, add all of the vegetables. Season with salt and pepper and saute to cook over medium heat until done to your liking. Be sure to re-check for seasoning and add more salt and pepper if necessary before serving.
