Our Orders This Week!  
First up we have a some important housekeeping to take care of: last week we had a rash of three folks who accidentally picked up other Members' orders. PLEASE be sure you have your order with your name on it (Cooler Items, too) when you leave your Pickup Location. If yours is a site where they give you the box be sure to double-check. Sometimes our fine hosts think that all of our boxes are the same and that they are interchangeable. If you find that you have mistakenly retrieved the wrong order PLEASE call us so we have a heads-up (often the other person has arrived in the meantime!). Remember we don't get texts on the farm and email only works when we happen to be in the office (these days as little as possible!) so CALL. These incidents are so rare but after last week we figured it was best to throw out a reminder! OK, now back to the Good Food!
Just about an awesome $20 Farmer Pick this week! 
Everything went just perfectly this week with orders, packing and deliveries, yay! SO nice when that happens. One change-up was that the Green Onions from Signal Mountain Farm turned out to be more like Baby Onions but they are so mild and sweet we're sure everyone will be more than happy with them. We were thrilled about the timely rains on Tuesday, Will and our French WWOOFer Marouane had JUST finished planting the last Tomato when the thundershowers started. It was just the right amount of rain and not too hard, we really could not have ordered it up better on a weather menu! Lots more still to plant but that was one of the big jobs done.

Weekly Recipe:
Truffled Cheesy Mac & Greens
 
Yes, a little indulgent but this sure is a delicious dish! Featured in our Veggie Dinner Package this week, too.

     1. Prepare 1 pound of pasta according to package directions.

     2. Wash, trim and chop 1-2 Spring Onions and up to ˝ pound Kale, Spinach or other Greens.

     3. To make cheese sauce: in a saucepan melt 2T Butter, add chopped Onion and cook for 3-4 minutes until just softened a bit. Add 2T Flour, salt and pepper. Cook for another 1-2 minutes on medium heat. Add 2 cups milk or cream, whisk to blend and cook for another minute or two to thicken.

     4. Grate 1 cup Truffled Fontina cheese and add to sauce, remove from heat and stir to melt/combine.

     5. In a skillet sauté prepared Greens with 2T Butter, salt and pepper to taste just until the Greens are wilted.

 

Mix together the Pasta, Greens and Cheese sauce, serve with Salad for a terrific lunch or supper. (You can also bake the prepared Mac and Cheese: place in a baking dish, top with more cheese and bread crumbs and bake for 20 minutes at 350 degrees.)

We are at The Carter Center every Saturday from 9am - 1pm.
