What a great week! All went terrific for orders and we finally had enough days without rain to finish prepping the field to plant Tomatoes, Peppers, Eggplant, Squash and Beans. Potatoes and first Beans are all up and growing like crazy. Our gracious Mother Nature has promised us a rainy weekend to get it all settled into the Earth, we are so thankful.

Will has established Permaculture rows in our main growing field: we have been working toward this for a few years.
| Two of our gorgeous Hogs made the trip to the processor on Monday so we'll have the first of our Pork harvest available in the next week or so. Our animals live happy, happy, happy lives and we are so proud of this. If only all of the meat in our country was raised humanely, with the natural welfare and HAPPINESS of the animals put first over profit, what a wonderful world it would be.
Slow Food Festival

We had an amazing time putting on our first Slow Food Festival this past weekend in Roanoke, Alabama! Totally pooped out but what a wonderful crowd and terrific experience. The Whole Hog Roast was incredible with Frolona Farms pork roasted on the County Sheriff's roaster by fantastic volunteers. The Lexicon of Sustainability exhibit was beautiful hanging in the old Main Street Theatre (the town's theater burned in 1980 and was just recently restored by the Rotary Club as an open-air amphitheater). The inspiring film "Eating Alabama" rounded out the event. Our favorite quote of the day? An 8-year-old matter of factly explaining to his friend that "Slow Food is the opposite of fast food." Hooray!
Weekly Recipe: Pasta Primavera
 Light and delicious, our Pasta dish uses Kale, Tomatoes and Asiago Cheese. Terrific for lunch or dinner, we know you will love this quick and easy meal.
1. Wash, trim and chop 1 large or two small Tomatoes (no need to peel). Wash, trim and chop 4-5 Kale leaves, more if you love it the way we do! Prepare chopped Garlic and/or Onions if you like, too. 2. Grate or crumble 1/4 pound Wright Dairy Asiago Cheese (a little goes a long way with this flavorful cheese!). 3. Prepare Pasta of your choice according to package directions. 4. While Pasta is cooking saute the Kale, Tomatoes and Garlic/Onions with 2T Olive Oil, salt and pepper. Cook only until just wilted. 5. Toss Pasta with the vegetables and cheese, serve immediately with a salad and glass of wine, mangia!
