Our Orders This Week
Our $20 Farm Box this week tragically sans Strawberries. : ( 
So this week we suffered one of our worst fears: The Strawberries arrived in such poor condition there was no way we could send them out for our orders. It was too late to get more Strawberries so we had to do some shuffling. We sent all Farmer Pick orders an extra order of Florida Oranges, Fruit Only Boxes got extra Oranges and Apples and for Fruit Cheese and Cracker Packages we sent an Orange/Apple combo in place of the Strawberries. We will also automatically replace or credit the Strawberries in your next order for all Farmer Pick Orders, Custom Choice/Add-On Orders for Strawberry pints and Flats and (2) pints for the Fruit Only Boxes. We are SO sorry about this but there was not much we could do other than forge ahead! Thankfully the Asparagus is completely gorgeous, tender, sweet and delicious and no other problems, whew! That was enough for one week.

Creamy Asparagus Soup 
Our Weekly Recipe is the amazing Creamy Asparagus Soup featured in our Soup and Salad Box, yum! The White Sweet Potatoes used for the base give it a light body and naturally delicate sweet flavor.

 

1. Wash, peel and dice four pounds of White Sweet Potatoes. Boil or steam until tender, season with salt and pepper to taste, mash well.  

2. Wash, trim and chop Asparagus, roast, steam or sauté with 2T Butter, salt and pepper. If you like, reserve some Asparagus for the salad, too.  

3. Place the Sweet Potatoes into a soup pot. Add liquid enough to achieve desired consistency. (Use the water from boiling the vegetables if that's how you prepared them, water, stock and/or cream.) We like to use a mix of water, Chicken stock and cream.

4. Add ˝ of the prepared Asparagus, puree with an immersion blender, food processor or blender.

5. Add remaining Asparagus chopped into bite-sized pieces, heat and serve garnished with chopped Green Onions.

We provide (2) Chicks, a Feeder, a Waterer, 25# bag of Chick Feed, a Rooster Return policy, advice, on-site delivery and Tech Support. The Eggs are in the incubator and we'll start placing the Chicks as early as the first week of May so check out the details here and put in your reservation for your Chicks!
