Our $20 Farmer Pick box this week! 
So the Florida Organic Strawberries really got everyone excited: our Online Market was pretty much sold out, yay! If you missed them don't worry, it's looking pretty good for next week, too. We do try to extend our Southeast Regional season especially on Strawberries and Tomatoes as much as possible. Because we have a great group of growers in South Georgia, Alabama and Florida we can get a jump on these popular items. Some folks are far enough South to have field crops this early and others grow in unheated Hoophouses or Greenhouses. In years past we depended solely on the GA/AL berries and tomatoes and missed out if crop damage severely limited or even eliminated the harvests. We hope you all enjoy the first early picks and we all look forward to a wonderful growing year for all of our farms! We did have one replacement this week: the Florida Bell Peppers were short so we replaced the second Pepper for $30 and $40 boxes with an order of Slicing Tomatoes. : )

A couple of Moore Farms updates: our young Goat who was treated for that crazy spinal parasite is still doing terrific, he will probably always have a little limp but he runs with the herd and seems to be fully recovered! We finally went ahead and made the investment in a Poultry Plucker! It's a big deal as they are an expensive piece of equipment but now we will be able to plan on offering more of our own farm-raised happy chickens for our meat eaters.

MF&F Farm to School Program
Introducing our new program that gives back to your neighborhood school! We get requests all the time for new Pickup Locations to be hosted by a community's school. We do have some school host sites but we have found that calendar schedules often make it hard for us to offer regular weekly deliveries year-round. In 2014 we did a trial of this program with a Decatur Elementary school and it was a hit! Here are the details: 
  • New Members ordering from our Online Market tell us they were referred by the school's Farm to School Program.
  • We'll donate $5 back to the PTA or other project of your choice (school gardens, field trips, etc.,) for each referral.
  • Members can choose any existing Pickup Location from our Online Market and we can help you promote one or two good options that are near the school for afternoon box pickups.

This is a win-win-win! More Good Food for your families, more orders for our farmers and more support for existing Pickup Locations. We'll prepare customized flyers for your school to hand out for those who are interested! Call or email Laurie Moore for more info: 256-282-7889

Cabbage Koftas
Cabbage Koftas
Ohmygosh this is one of our all-time favorite recipes for Cabbage, the recipe shared with us by Member David Shea a few years ago. This is a little more complicated to prepare but it is worth the time! Simply delicious. 

Koftas are fried dumplings in a spicy sauce. The dumplings can be made using different vegetables and some popular ones are cabbage, laucki (bottle gourd), zucchini, or potato. This version uses cabbage and serves 4-6.

 

For Koftas:

2 cups shredded cabbage 

3/4 cup flour (or more as needed)

1/2 t ground cumin seed 

2 t chopped fresh cilantro 

1 t grated fresh ginger

1 chopped green chili

1 teaspoon salt

Oil to fry

(We have also steamed to cook the dumplings and sometimes prepared with meat, adding Ground Beef or Pork.)

Sauce:

3 medium tomatoes

1/2 inch grated ginger 

1 green chili finely chopped 

2 T yogurt

2 T oil

Pinch of Garlic Powder 

1 t ground cumin 

1 T flour 

1/2 t Turmeric  (or 1 t grated fresh Turmeric) 

1/2 t salt  

1/2 t paprika

1/4 t red pepper flakes

2 tablespoons finely chopped cilantro 

1 teaspoon sugar

 

To prepare:

    Mix together all the kofta ingredients. Adjust flour as needed to make a texture of very soft dough. Note: make this mix just before you are ready to fry the kofta otherwise it can become watery.

    Heat the oil in a frying pan on medium high heat. (you want at least 1½ inches of oil.) To check if the oil is ready, just put one small piece of the mix in the oil, it should sizzle and come up right away.

    Slowly drop about 1 Tablespoon of the dumpling mixture into the frying pan one at a time. Fry the koftas in small batches, avoid crowding the frying pan, turn occasionally until they turn golden-brown.

 

Sauce:

    Blend the tomatoes, green chilies and ginger to make a puree. If you prefer a milder version, take the seeds out of the green chili first.

    Add the garlic, cumin and flour, mix well in a sauce pan. Add the turmeric, coriander and paprika, cook on medium heat until the sauce reduces about half.

    Next add yogurt and cook for another minute. Add about 1 cup water and the salt. As it comes to boil reduce the heat to medium-low and let the sauce cook for few minutes. 

 

Note: adjust the thickness of the sauce to your taste by adding more or less water. Add the prepared koftas and simmer for another 7 to 8 minutes. Turn off the heat, add the cilantro and cover until ready to serve with rice.
