Okey dokey, so despite our best efforts we were not able to make the first Fall-ish delivery of Hydroponic Butterhead Lettuce happen for this week's orders. We're working on getting that lined up hopefully for next week as we are all ready for some nice salads again! Also the Okra delivery from Living Springs Farm was way short so we have Okra ~OR~ Green Beans for our $30 and $40 boxes. Otherwise all went pretty well! We are starting to get into the new routine with Will's mom on-site here at the farm and her fantastic caregiver Shirley makes it possible for us to start getting back to some kind of normal schedule. We are very fortunate indeed to have such wonderful folks working with us from Life Choice Hospice, they are truly angels. And again we cannot express to our Members how much we appreciate your support (and patience) as we have struggled to get our world back on track. Difficult times really bring out the best in people, it's true. Every week we'll be able to add more of our Online Market items back into the mix so you all can resume your Good Food diet again!

Braised Oxtail with Polenta Dinner
This yummy meal is a favorite comfort food for us on the farm!
Braised Oxtail
Use a large skillet or Dutch Oven for the Beef preparation. Thaw and season Beef with salt and pepper. Sear on both sides in a hot pan with 2 T Olive Oil. Remove Beef and set aside. Wash, trim and chop two Tomatoes (peel and seeds are OK), 2-3 Sweet Peppers and 2-3 small Onions. Add prepared vegetables to the same pan that Beef was seared off in, add more Olive Oil is necessary. Saute for 3-5 minutes or until veggies start to get soft. Place Beef back in pan and cover, braise for 2-3 hours at 300 degrees. Remove any bones before serving with:
Stoneground Cornmeal Polenta
We prepared this Polenta dish with the Saxon Mill Cornmeal and it was fantastic! The grind is just big enough to make a nice creamy Polenta.
1. Bring 4 cups of salted water to a boil.
2. Slowly add 1 cup Saxon Mills Cornmeal and whisk to combine.
3. Reduce heat to medium-low, cover and cook for 20-30 minutes, checking regularly and whisking to prevent sticking.
4. Check for seasoning, add salt and pepper as needed. Just before serving stir in 1/2 cup Grated Red Hill Cheddar Cheese.
