PEAR RELISH
A Southern tradition, this does not have to be preserved by canning: you can make a quick batch to keep in the fridge for up to a month or even freeze it. Terrific with meats or vegetables, it's a tasty way to brighten up many dishes. Think of it as a Southern Fruit Salsa. It's a traditional condiment for Pork Chops or Sausage.
1. Wash, trim and peel 4-5 Kieffer Pears, chop into 1/4" dice or grate on a large grater.  2. Wash, trim and finely chop 1 Sweet Pepper. For a spicier version add a chopped Jalapeno Pepper or Red Pepper Flakes to taste. 3. Trim and finely chop 1 small Onion. Combine prepared Pears, Pepper and Onion in a saucepot. Add 4 Tablespoons Apple Cider Vinegar, 1 Tablespoon Sugar, 1/2 Tablespoon Salt and freshly ground Pepper. Cook over medium heat for 20 - 30 minutes, stirring occasionally. Keep Pear Relish in a sealed container in the fridge, freeze or preserve in canning jars with a hot water bath. PEAR PIE We found this lovely blog about Kieffer Pears and a wonderful Pear Pie Recipe.
