Our Orders This Week
Our $20 Farmer Pick box this week with the surprise Pink Eyed Peas! 
So we had a last-minute change this week as Signal Mountain Farm reported in on their Bean harvest. They had the storms this weekend that slipped by us and they were pushed back on their picking days, just did not have time to get our Beans ready for us on time. (We did have some of the terrific Asian Green Beans for our Custom Choice orders from Living Springs Farm so we were covered there.) Next we got a call from one of our new growers, Blue House Farm, that they were
picking Pink Eyed Peas and did we need five or six bushels? Amazing. We still had some folks who got a second order of Slicing Tomatoes instead but the Peas really pulled it out! Technically Pink Eyed (or Black Eyed) Peas are Beans, did ya know that?

Summer Pasta Salad
Veg Pasta Salad
Featured in our Summer Salad Supper this week we think even picky veggie eaters will gobble up this yummy dish!

Ingredients:

Pasta of your choice Slicing Tomatoes

Peppers

Onions

Garlic

Gouda Cheese

 

1. Prepare Pasta according to package directions.

2. Wash, trim and chop Tomatoes, Peppers, Onions and Garlic.

3. In a skillet over medium high heat saute Onions and Peppers with 2T Olive Oil, salt and Pepper until Onions start to brown.  

4. Lower heat to medium and add Garlic and Tomatoes. Season with salt and pepper, stir. Cover and simmer for 5 minutes.  

5. Grate Gouda Cheese, toss Pasta with prepared vegetables and top with cheese before serving with fruit salad.  

 

This Pasta dish can be served hot, room temperature or chilled and is fantastic the next day!

Here is another yummy idea for the items in this week's Farmer Picks!

Corn, Tomato and Avocado Salad
~ 3 ears of corn, boil, cool and cut  from the cob
~ 10(ish) cherry tomatoes, quartered (or any type, if you don't have cherry)
~ 1 avocado, cut into bite-size chunks
~ 2 T olive oil
~ juice of 1 lime
~ salt and pepper to taste
~ 1 T cilantro, chopped

 

Toss the corn, tomato and avocado. In a small bowl, mix the oil, juice, salt, pepper, and cilantro. Toss with the corn mixture. Refrigerate for a few hours (you can serve immediately, but the flavors combine better if you let it sit for a bit).
