Festive Holidays Orders

Our $20 Farmer Pick order for this week: beautiful!
|
What a tremendous week we had! Been struggling with the wireless router, finally got a new one and that is (mostly) up and running again. Then we had a super bizzarro glitch with our website hosting that resulted in about 20 orders getting zapped from our system! It was very time consuming to track them all down but I think we got everyone. Today Will and I were both on the road in two vehicles getting all of the deliveries done so I was rather out of my element! So nice to see folks at our Pickup Locations, especially Ann Jackson at Cox who has been filling in for their coordinator Rachel Azriel who is out on maternity leave (congrats, Rachel!). We get to know so many of our Members via email and phone calls and of course what you eat, it's really great to meet you all in person. OK, so after all of the technical voo-doo we only had a couple of things going on with orders: the first harvest of Peaches from Beech Creek Farms were not as plentiful as expected so some of our $30 orders got a Peach/Nectarine Mix and some got Blackberries. Hope everyone was happy with those substitutions! (Pssst! On the way home from deliveries today we picked up the first Apples from Beech Creek for market on Saturday!!)

Just added: our Refrigerator Pickled Radishes!
|
We just added our Refrigerator Pickled Radishes made for us by The Preserving Place! These are so tasty made with premium ingredients. Beautiful on an antipasto plate, top your burgers or sandwiches or we love them chopped and added to Potato Salad or Cole Slaw. Talk about some great holiday grilling and feasting ingredients! We'll have a limited supply so look for them when our Online Market opens for ordering tomorrow! We love to update everyone about Farm Critters and we'll have more Baby Goat pictures for you soon. Thanks so much to everyone for the great feedback on the

"Mr. Toad" about to eat a beetle.
|
Mama Chicken and Duck Hen story! They are both still sitting as of this evening so tomorrow I plan to check the eggs individually to be sure they are viable. A Hen will sit on a nest for a very long time before giving up on her eggs and if they are not fertilized we will replace them! If you didn't see our Facebook post about our newest resident, Mr. Toad has moved onto the Farmhouse porch! He comes up every night to catch the bugs that are drawn to the porch light. I admit that I leave it on a little longer for him before we go to bed! And I have supplied him with a dish of water, he jumps in there and takes a little soak each evening. He's pretty cool, we like having him around and especially how many beetles he eats! We hope everyone enjoys a terrific Fourth of July Holiday Weekend, we'll be trying to relax a bit on the farm with something chilly to drink in our little kiddie pool! : )

Our Recipes this Week are for our
4th of July Side Dishes
Grilled Sweet Corn on the Cob
(If you are not already familiar with the common insect pest that is often found with organically grown Sweet Corn please be sure to read one of our previous posts here !).
The trick to grilling Sweet Corn is to soak it in water before placing on a medium hot grill, still in the husks. Be sure to cut off the ends first as we referenced in our Organically Grown Sweet Corn article (see above). Place Corn ears in large bowl or wash tub, fill with cold water to cover. Soak for an hour, drain and place on grill. Roast for 30-40 minutes, remove whole ears to a bowl or dish with a lid, cover to steam the husks and silks (they will remove easier). Keep warm until just before serving with plenty of Butter (we love the Garlic and Herb Banner Butter on Corn!).

Red White & Blue Potato Salad
Will's mom Virginia is known for her Potato Salad and we love how easy it is! Use our Red White and Blue Potato Mix for the holiday.
Wash 3 pounds of Potatoes, put in a cooking pot and cover with water. Bring to a boil, cook until done (fork-tender). Drain, rinse and allow to cool (they should still be warm). Peel potatoes, cut into pieces and mix together with 1/2 cup Mayonnaise, 2T Sweet Pickle Relish, 2-3 chopped Celery ribs, salt and pepper. Add more Mayo as needed. Refrigerate until serving.
*Add-ons: sliced Green Olives or chopped Vidalia Onions often make it into the bowl, too. Also here on the Farm we often cut the Mayo in half and add Plain Atlanta Fresh Yogurt.
~ Grilled Squash and Vidalia Onion Wash, trim and chop a mix of Squashes into 2-1/2" chunks. Trim, peel and chop Vidalia Onion into 1" chunks. Soak bamboo skewers in water for at least 1 hour. Thread the Squash and Vidalia chunks onto the skewers. Place on a plate and drizzle with Olive Oil, season with salt and pepper. Refrigerate for at least 30 minutes to allow the oil to soak into the Squash. Grill skewers over medium heat for 10-15 minutes.

Best Ever Grilled Sweet Potatoes
Sweet Potatoes take on a whole different flavor when roasted on the grill. Wash, trim and wrap unpeeled Sweet Potatoes in foil. Roast on the grill over medium high heat for 45 minutes to an hour, check for doneness by giving them a squeeze with a potholdered hand. Serve warm with butter (brown sugar and cinnamon are optional and make a terrific nutritious dessert!).
